Germans are also given credit for light tomato BBQ sauce in the Lexington area of the Carolinas. The German settlers and Ulstermen (Ulster-Scots) made their way down from Pennsylvania to the Carolinas in the mid to late 1700s.

As far I recall it was the Germans who brought the mustard to Carolina, please correct me if I'm mistaken.
