I have to say, I have never enjoyed collards (first experience with them was actually incredibly traumatic as a child) but I always try to eat them for New Year's like any good Southern girl. This year I decided I'd do it right and make 'em from scratch. Watching you make them was something special. Your voice is so lovely and sweet, it was like being taught in my grandmother's kitchen. And then to see the end results, I don't think I have ever seen a bowl look so appetizing! I'm so glad you made this video,

She did a very well job in what she did, it’s not to take away, it’s to add just some things for people that are not familiar. Bacon fat, if you throw my mamas away, you’ll feel the roof of the house raise she be screaming so loud.. she did a lovely job for the kind of greens she’s made. There’s plenty of ways. Notes were on the stems, that’s all.
If you're feeling out of sorts, all it takes is a hot bowl of collard greens to cleanse your system and give you back your energy. It is so uplifting. The simplest things are the best, the easiest, and the cheapest. The Lord doth provide.

Collard Greens or Pot Liquor were the 1st things my gran gave us when we were too sick to go to school & had to stay with her.
Lord provides with simple, easy, & cheap recipes that often times are better than the expensive meats and Seafoods !! 🤗

Being from the south my mama raised me to fix my greens so similar to how you fix yours. They are delicious I know! Don't change a thing! When it came time for you to taste yours I was wishing I could taste them as well LOL!

We grew up eating greens like this! Granny would use smoked ham hocks, smoked neck bones, or pig ears and/or tails...whatever she could afford. Bacon grease is a given. She would fix collards, mustard or turnip greens (with roots in them) all the same. She would also top them with hoe cakes...talk about pot liquor! Lol. With Grannies pan fried cornbread...heaven!

I made this for Thanksgiving yesterday and the whole family loved it. And we’re talking about real Southerners who don’t play about their food LOL, I was a little nervous about all the onions too, but the bacon grease and ham hock flavor keeps the onions from being overpowering. It was JUST right!

My Grandmother could throw down on some Collard Greens. This brings back such good memories!! Now we just need the fried pork chops, candied yams, blackeyed peas, cornbread and some hot pepper vinegar!!
Maybe some baked mac 'n cheese if we have the time, lol.
I have never seen the garlic or the onions added, but I know all about those ham hocks!! It looks good and I know the smell was amazing!!
You do know how to cook greens. I have been doing it almost like you do for years. My mamma taught me. Go girl, teach the young ones how it's done. There are many young folks that want learn how to do it the old way. I have cook books from the 1800 and am always looking for the old time way.

I've ate so many collards , Maw used to keep coal oil rags tied around my ankles to keep the cutworms off me. If It hadn't frosted yet, I'd pick me a mess of'em.. throw them in the Freezer for a bit. Greens look slamming 👍I do mines pretty close to this. I just cook ham hocks for an hour without any seasoning. Then change the water and rinse hocks. Put back on for another hour and season at this point. This way I don't get any of that foam from boiling them and not waste any seasoning.
This looks absolutely delicious, thanks for sharing. Even though I’m not a fan of garlic I’m going to definitely give your a recipe a try. I freeze my bacon fat, I pour it into an ice tray. Once it’s frozen I put it in a Ziploc bag, and take one or two out of the freezer whenever I need them.

Jean B. Omg. I’m going to start freezing my bacon fat. So smart. I have the perfect container for my drippings. It’s a crock like jar with a lid that snaps down with heavy wire and locks. Cheese came in it forty yrs ago. So it sits there until I use it which is not that often only using 13c to my pot of pinto beans or some with my greens. But that ice tray is great idea. Thank you

Cornelia, my late son took collard greens to his Schwab office Christmas party in San Francisco, and they raved about his SPINACH!!!HAHAHA!!! He told them about collards and how to cook them, this smart fellow from Birmingham, Alabama!! There was not a bit left in the bowl!! One person was seen running her finger around the bowl! A wonderful woman, Mrs. Wright. who watched the kids after school, taught my four children how to cook collard greens. The first thing she taught them was how to wash them in the kitchen sink! It was like a Montessori class! I really like your site, Cornelia. Bless you!

My dad's favorite was large lima beans with ham hocks, onion, plenty of black pepper and a little salt. He ate a raw onion on the side, which he called an Irish apple.

Wow! That looks so good! I usually fry my collards using bacon grease and ham hawks to season them. I don’t Boil my cabbage to often because I don’t want them to mush up! However your method looks so good that im going to try it out the next time I make them! Great recipe thanks for sharing!

Love it! They look lip smacking good Ms Cornelia!! I'm real old school as well ( I like picking my greens, but the bagged greens are more convenient and saves time. For those that don't like the onion pieces, I usually just peel an onion and put it in whole. The grease (I use saved grease from cooked fatback and /or bacon). Also use the water from cooking the smoked ham hocks too! Then add my seasonings (seasoned salt, pepper, small amount of vinegar/sugar and red pepper flakes)...man you talking about something good along with some homemade cornbread and sliced tomatoes on the side!

Ms Deborah my Big Mama (Rest In Heaven) used to grow greens and taught me as lil girl how to clean and cook them...The cleanin' omg...Salt bath first, then rinse, rinse and rinse...Then clean them one by one (leaf by leaf)...However, I wouldn't have it any other way if I'm buying by the bunches at the store...Now if I buy greens in the bag (cut), I use the same technique in the video...I use smoked turkey wings/and or legs (My Big Mama used hamhocks)...That some good eatin'...

Wow! I'm from KY...I thought everybody made greens like this...lol! Though I use fresh greens n just jerk leaves off the stem.... sometimes I use my pressure cooker and put dried red pepper like my granny did in them

Thank you for posting! I can’t wait to try this on thanksgiving. I’m 45 and I didn’t develop a taste for greens when I was young, so I never learned to make them. I’ve been saying I wanna try to make them, but I had to find the “right way” to cook them. I think that this is it!

When my grandma cooked any greens , the next day for lunch we would have Greens, boiled egg,cornbread,hamhock pieces, and Redhot hot sauce.With a side of tomato, and a slice of onion. That is some good cookin,and eatin.

Your recipe is it! Separating the ham hock broth, then doing the layering as you call it and sautéing the onions, garlic with bacon grease. Then, adding the meat and greens into it is wonderful. I will using your recipe FOREVER!! Thank you, thank you, thank you 😊

Thanks for letting me know how to make nice collard greens. I will try this recipe the next time I get a hankering for collard greens. It looks like a lot of worth, but I am sure It is worth it.
This is delicious, I use to cook with the ham hocks but can not any longer due to blood pressure issues. I use smoke turkney legs or tails.
The bag green r just to full with stems for me to use any longer. And even though they say they're already wash nobody in my large family trust that saying, we all still wash them. Lol
I use Smoked Turkey wings. The flavor is so good! It's healthier too! I don't miss using ham hocks at all! Oh, and I use about a cup or two (depending on how big my batch is) of Swansons Chicken Broth instead of bacon grease.
@@cmlharper Yep. Me too. Chicken Broth and turkey wings. Hammhocks good though. But Turkey is healthier and Chicken broth. I actually use the entire 160z liquid box.

It is amazing to me how many people open a "can" of collard greens, throw them in a pan and declare I can't stand collards! I love them but like you I do them right, tho probaly not as good as you. One of my favorites is to use smoked turkey in place of ham hocks but either way they are delicious. You just have to put a little "soul" in em! 🙂

This is about the way I make them but since I don't like smoke i use fresh hocks. This looks better than mine with more spice than I use, I may try this, probably much better! Thanks for sharing. I may be from the north, but I do love my greens.
