Love when crafting and cooking mingle together! I love this dish, I know it by “Arrosticini”. I had it in the Abbruzzese region in Italy last year on a tiny mountain shack, where the sheep we ate lived just down the road. We grilled it ourselves on the community grills next to the shack and ate about 15 skewers each, with just salt and red wine in disposable cups. Such a treat! Thank you for sharing
I can attest to the extreme deliciousness of the marinade in this video. I made it tonight with my own blend but the same exact spices that are named. The only other things I did different was keeping our tiny little lamb chops whole and swapping out molasses and agave for brown sugar. Oh my goodness it was so delicious and charred so gorgeously. I only have chocolate mint growing at the moment so we skipped the mint sauce and the chops grilled so quickly there was no time to make rice or bulgur so we had it with mashed potatoes. So incredibly good. It's a keeper.
Slow cook 4 hrs in dutch oven 160 degrees c. Marinate with lemon and maldon salt before cooking. Two cm of white wine ( or chicken stock) in D.O. Put rosemary on top. Put lid on and leave for 4hrs in oven, no basting. I also put left over lemons in dutch oven to flavour sauce. I have tried browning fat side and not browning. I prefer to brown the fatty side in the dutch oven, less mess before the slow cook. Make gravy with left over sauce. I prefer shoulder of lamb but leg will work. .
Good lamb IS pricey, but the flavor is so amazing that a little goes a long way! Dress it up with a delicious sauce and awesome side dishes (that polenta would be perfect 🙂)

Looks delicious… we’ve never raised sheep so I don’t know much about cooking lamb. I do about any other kind of meat this makes me want to give it a try.

I went to culinary school and I do know how to make delicious lamb. That being said, I've never been a fan of that meat. I keep trying it, but it's just not my cup of tea.

My Sicilian grandparents also ate a lot of goats, and raised them, my dad spent time in his childhood herding goats

I saw very small lamb steaks at our local Kroger for the first time ever, and it was one small package. They were very expensive.

Yep absolutely it is, the right fats, not those from seed oils etc... but lard, tallow, butter, olive oil, avocado oil are Very good for you.
