- Beautiful, buttery, flaky, syrupy, semolina custard-filled sütlü börek, which basically means “milky pastry.” What an absolute treat!
INGREDIENTS
Makes 15-18 sütlü börek
For the syrup
1 large cinnamon stick
1 tbsp freshly squeezed lemon juice
300ml water
280g sugar
2 tbsp honey
1 1/2 tbsp rose water
For the semolina custard
800ml whole or semi-skimmed milk
120g fine semolina (and make sure it's fine!)
150g sugar
1 egg, whisked
1/4 tsp ground cinnamon (optional, or just a pinch if you prefer)
For the börek
One pack of filo
150g butter, melted
2 tbsp vegetable based oil
To serve
Crushed almonds or pistachios, ground cinnamon, icing sugar

Aksüt'ün sütlü böreği diye geldim ama biraz farklı sanki. Yine de bu temelden yola çıkıp deneme yanılma ile 60 yıllık o tarife yaklaşabilmeyi umuyorum.

@@sura5174 sütlü börek de tatlıdır. Üzerine dondurma ya da kaymak konarak tüketilir(di) Aksüt de kalmadı artık 🙁 Ayrıca Aksütün İzmirde olduğu dikkate alınırsa yunan kültürü ile bağ kurmak daha da kolaylaşır.
Demek ki bu tarif üzerinden çalışmaya devam etmeliyim ;)
@@erolborek8656 ben sizin soylediginiz tatliyi biliyorum o bu sekilde degil,kültür aşı diye youtube yazin 53. programda 15.dakikadan itibaren sutlu borek yapiyor edirneli bir teyze oda tatli belki aradiginiz bu olabilir,ayni cografyada yasayinca yemeklerde ayni oluyor tabii,benim kulturume uzak bunlar sütlü boreği ilk kez o programda duymustum

You can put the egg with milk and semolina at the start of cooking to make custard. I made today worked as fine.

In cyprus or Turkey you can't get filo, can you use yufka which is similar but not as thin as filo?
Wow lovely recipe - thank you for the veganising tips - can you an egg replacer (powder mixed with liquid) or is better not to and just increase the semolina like you said

Dear Meliz, the sütlü börek turned out very well except my syrup was runny and I could see yours was thick. What did I do wrong?
What happens If you pour the syrup on without cooling it first?

Hi could you prepare the inside filling and use later on? Or does the filling have to be done when still warm?? Thank you.
It’s fine to prepare the filling in advance - it’s best if it cools down anyway

Caster or granulated is better for the more subtle flavour in the syrup

Hi Meliz, I love your cooking and I have tried a few of them and on the way to try some more! 1 little comment though, I have never seen you with nail polish before and I am not sure it's a good idea when cooking.
