It can be hard to find moments of peace and quiet in a fast-paced world. In creating the Mindful Baking videos we wanted to highlight how important, how enjoyable and how delicious it is to slow down, get yourself into the kitchen and take some time to bake. I find that connecting with the ingredients and processes involved in baking can be really good for de-stressing, and I'd like to share some of those moments with you through these videos. Sam and I want to cover simple, honest recipes that are soothing and enjoyable to prepare, without to need for too much equipment, and we'd love it if you bake along, or just watch along.
This time we're baking a completely plant-based, decadent Chocolate Courgette Cake.

Tin size: 2 x 8" Sandwich pans
However you can use any tin, even a loaf tin would work great.
Cake Ingredients:
200ml Plant-based milk (I used almond milk)
100ml Vegetable or sunflower oil
320g Caster or granulated sugar
200g Plain flour
70g Cocoa powder
1/2 tsp Sea Salt
1 tsp Bicarbonate of soda
1.5 tsp Baking powder
1 Courgette (approx 180g)
For the ganache:
200g Dark chocolate
100g Plant-based butter

This is such a good idea. I love baking but tend to find it stressful because I’m often baking for a special occasion. This might help me to find mindfulness in it again.

I always squeeze the zucchini because they are so watery and the cakes don’t rise otherwise. Kind of like with a carrot cake.
I’m concerned about the frosting. It’s basically dark chocolate and vegetable shortening. Doesn’t it set too hard?

Yes it is :) zucchini is a much better word
we call them courgettes here in the UK
Yum that looks gorgeous and very 'M' (hate that word lol!) That ganache is so glossy. You are so soothing to listen to! "Secretly healthy" lol!!
is it possible to reduce the amount of the sugar ?
Yes. I've made it and reduced the amount of sugar by 60 grams (so instead of 320, I used only 260 grams) and it came out perfect, the right level of sweetness for me.

Good grief, imagine being so insecure that you have to post this comment 😆 If it bothers you that much, just use regular butter instead of plant-based, and you'll be fine! Or accept that not every recipe on UA-cam is catered to your personal preferences, and go find one of the literally hundreds of thousands of non-vegan chocolate cake recipes out there 🙄
