Try baking the crust on back of the tray after spreading the dough flat then use a circle cutter you will be amazed by the equal layer mini crusts

How many mini tarts does the 1litre of custard mixture make?
The filling looks great but you really need to be blind-baking those tartlet shells as you're losing a lot of space to add in some extra filling.

Sorry, this will probably be late, but no, you can't use oil, must be butter.
That dough is so thick you may as well have spread the milk on a bun.
