Try baking the crust on back of the tray after spreading the dough flat then use a circle cutter you will be amazed by the equal layer mini crusts

The filling looks great but you really need to be blind-baking those tartlet shells as you're losing a lot of space to add in some extra filling.

Hey just a little advice...you could've poured rice or macaroni on top of the dough before putting it in the oven 😅
