Today we flew all the way to Chiang Rai in Northern Thailand to try some unique Tai Lue/Shan dishes that I’ve never had before. The restaurant we visited is located just around the corner from the famous blue temple - Wat Rong Suea Ten (วัดร่องเสือเต้น) which is full of tourists, yet they get no foreign tourists eating here!
Hopefully we can rectify this today as you should ALL be eating here! They have some really unique dishes that I’ve never tried like the khan soi noi (think banh coun in Vietnam) the Shan style fried tofu (best chips/french fries you’ve ever tasted and khan soi kua (like a nam ngiao / Lao khan soi hybrid) and all were fantastic. Of course I had to try the chicken khao soi and all the dishes were absolutely fantastic.
Please don’t come to Chiang Rai without trying this amazing Tai Lui food, it’s where all northern Thai food originates from. It would be like going to Naples and not eating pizza!
On top of the wonderful feast and the Blue Temple, being in Chiang Rai, we had to get a coffee. We headed to a little coffee shop/campsite on the banks of the Kok River called TRIPLE C campsite & café. Great coffee and a really nice place to chill out.
All in all, we’ve loved our time in Chiang Rai and we’ll definitely be back again soon. We much prefer it to the more popular Chiang Mai and think you will to!

It all looks good, but I want to try the Khao Soi Noi, that's something I've never seen before and I salivated just watching them and their filling. Keep 'em comin', Gary. I'm sittin' here in the freezin' Northeast US, and trying once in a while to make dishes like what you can get every day or night in Thailand.

Enjoyed this. I used to live in Chiang Rai and can confirm it is the epicentre for coffee lovers in Thailand. You should devote a day to doing a coffee pilgrimage in the north. I can suggest many places 😊, inside the city and outside too.

If you come Chiang Rai, you need to try all kinds of ข้าวแรมฟืน.
We have ข้าวฟืนจิ้ม, ข้าวฟืนทอด, ข้าวฟืนน้ำ, ข้าวฟืนอุ่น.
as my opinion;
ข้าวซอยไก่ i think Chiang mai, Nan,, Lampoon are better than Chiang Rai.
ข้าวซอยน้ำคั่ว, ข้าวซอยน้ำเงี้ยว, ข้าวซอยน้ำหน้า i think Chiang Rai is the best 😁 and normally we eat with เส้นข้าวซอย. (The other places basically eat with ขนมจีน)

Yummy.....missing Northern Thailand and the Khao Soi. It's so funny, but I had visited Myanmar in 2016 and definitely had the Khao Suey there but can't recall the flavor. Getting old.
