Red Cabbage Salad with Cubed Crispy Ham

- Here's a delicious winter salad that was always a favorite when I was a child. Today, hydroponic farms give us crispy greens for salad year-round, but I recall salads made from the cabbage family in the winter because that’s all we had. Especially delicious is a salad of shredded red cabbage. The secret is to shave it thinly with a mandoline, or, as my grandfather would do it, slowly with a thin sharp knife. As soon as the cabbage was cut, Nonna Rosa tossed it with a splash of wine vinegar, and the acidity of the vinegar kept the red brightness of the cabbage until it was ready to dress. Olive oil and vinegar, with salt and pepper, were the usual dressing, but sometimes she made a warm dressing, with some cubed ham or prosciutto crisped in olive oil with a bit of wine vinegar, brought to a boil, and tossed hot into the cut cabbage. Makes me think of my Savory Red Cabbage that my mom and her mom would make for Thanksgiving and Christmas. Now it's my turn and my daughter's turn. I was told it's a German dish, but my Italian son-in-law loves it. I discovered you have to fry the onions in bacon grease because otherwise it doesn't taste right.

Oh, Lydia, how I do want to "come" and eat a delicious meal with you! I was lucky to be able to visit your restaurant in Pittsburgh quite a few years ago. We were returning to Michigan ,where we live, from Virginia and I made reservations to have a meal while passing through Pennsylvania. It was the best meal of our lives. Seriously! I'm a long time fan for good reason. Thank you for all your years of great food and inspiration.

Simple and tasty. I think I would have kept it in the wooden bowl to serve, but that sort of thing appeals to me. It is a rustic salad and the bowl seemed to suit it. Either way I wouldn't mind a plate full.

Looks wonderful! Love cabbage-especially red cabbage-and would happily eat that anytime. In my version, however, I add a sweet element (honey, sugar, agave or maple syrup) to the dressing, to balance the acidity, and might add some raisins (or cranberries or tart cherries) to the cabbage. But, no matter how you do, red cabbage rules! Thank you, Lydia.

Is this an Italian dish? I come from the southeast (US), and we used to do this with greens from the garden. We would add whatever we could find (green onions, lettuce, radishe, etc) and pour the hot bacon grease over with a little vinegar.
