After seeing this introduction i would say, only giants all the way. Those are very precious. I might even add to mourn every death.

I'd say stick with Giants only from the getgo. Sure, the ball will start rolling slowly, but when it does, hoo boy. Maaybe some thematic exceptions, like who would sympathise with the Giants' cause. Not too familiar with the GoT lore here.
Not like any human addition will be able to face the wights n shit at start anyway. Pick your battles, navigate the treacherous badlands. That might make it more exciting. Scrounge and scavenge until the rise to glory.

make the free folk only special use case. like only one troop variant. or better: for each companion you have you can hire ten free folk. you can assign them in the battle to their commander.
