Pumpkin Sheet Cake with Cinnamon Cream Cheese Frosting

  • Pumpkin Sheet Cake with Cinnamon Cream Cheese Frosting
    CAKE
    1 cup (2 sticks) butter, melted
    1 cup milk
    1/2 cup 100% pure pumpkin (NOT pie filling)
    2 cups sugar
    2 large eggs
    1 tsp vanilla extract
    2 cups all-purpose flour
    1 tsp baking soda
    1 tsp pumpkin pie spice
    1/2 tsp salt
    Preheat oven to 350°.
    Spray a 12”x17” jelly roll pan with non-stick spray like PAM.
    In a large bowl, beat together, melted butter, milk, pumpkin, and sugar. Beat in eggs and vanilla extract. Then beat in flour, baking soda, pumpkin pie spice, and salt.
    Pour batter into the prepared jelly roll pan and bake for 20 minutes, or until the center springs back to touch. Cool completely! 
    FROSTING
    1/2 cup (1stick) butter
    8 oz cream cheese (1 block)
    1/4 cup milk
    1 tsp vanilla extract
    1 tsp cinnamon
    6 1/2 cups powdered sugar
    In a large bowl, cream the butter and cream cheese until smooth. Beat in milk, vanilla extract, and cinnamon on a low-speed until combined.
    Then slowly beat in the powdered sugar. Once all the powdered sugar is mixed in, beat on high until the frosting is smooth. Spread frosting on top of cake.

    I make that as a pumpkin roll. I lay it out on a powdered sugar towel after getting out of oven. I roll it up w the towel to let cool, then unroll and spread the icing and sprinkle w chopped nuts. Then roll up again. Soooo good! I sprinkle powdered sugar on top then a layer of more chopped nuts and icing on top sometimes too. Beautiful!

    Enjoyed hearing how/who you learned to cook from. I hate that the skill of cooking doesn’t seem to be passed on as much to children nowadays. It’s a major life skill imo.

    Hi Tom & Melissa! I have two of those pans, and the story of how I acquired them is very interesting!
    Growing up in central Pennsylvania from 1949 to 1971, we had no people of any ethnicity other than white, which seems quite strange to me now! So when I started college, I was really excited to end up with one of the only 3 Chinese students on campus as my roommate!
    Being from Hong Kong, my roomey told me she had never seen snow, so when we got our first big snow of the season, a couple of the metal cafeteria trays (just like your sheet pan, Tom) just happened to find its way back to our dorm room! Since neither my roomey nor I had classes 'til later in the day, and since our dorm was perched high on a hill with a winding driveway that hadn't yet been plowed, we bundled up and went sledding on our "borrowed" cafeteria trays!!!😆😂
    I'm a bit ashamed to admit that those trays never made it back to the cafeteria, but it was worth risking getting in trouble just to see the joy on my little Chinese roomey's face as I watched her zoom down the hill on that tray!!!
    I'm amazed that those trays are still in such good shape considering the workout they got!!! ❄❄🛷🛷🥰😉 Now I need to go fill one of them up with pumpkin cake!!! 😋😋😋👍👍

    Spread that frosting all the way to the edge. With that being said Crust to crust is a must. I got that saying from Sunny Anderson on The Kitchen. Food Network channel. I just had to say that.

    Thank you for another great video. Never take a cake out of the oven if it hasn’t separated from the sides of the pan. It’s like the cake shrinks in just a little bit to release itself.

    I do cakes and I was like taught to use a damp dish towel and place it over ur blender until it has been incorporated .then turn off the machine and take it off😊😊

    When adding powdered sugar (or flour); cover the mixer with a clean kitchen tea-towel and it will "stop the cloud in your kitchen".

    You are using a Jelly Roll pan. You could make that batter into a Pumpkin Rolll.

    We have our family pumpkin cake. It's a traditional hand down pumpkin cake from the generations. I can't wait to try yours. I am very impressed with the cream cheese icing. Yes, somebody always gets to lick the bowl or lick the beater. Most of the time, my family would add nuts to the cream cheese icing. Would you add the chopped pecans or walnuts to the icing while you're mixing it, or would you just sprinkle the nuts over the top of the icing after you iced the cake, Which way works better? I can't remember how my family did it with the nuts and the icing.

    Why can’t you use a dry measuring cup for milk?

      The reason is the milk(or other liquid) can kind of mound up over the top of the cup because of the surface tension, which would make more than 1 cup. It could make a big difference in some recipes.

    Did your pattle come with your mixer ?     I really like that you scrape ALL the ingredients.
    Many cooking shows don’t do this. They pour ingredients in & never get ALL from bowl.

    Tom and Melisa, I absolutely love your recipes and I enjoy watching you two prepare them. I was wondering do you make old fashion cooked fudge candy? My grandmother used to make it .she cooked it on top of the stove and put walnuts in it ,the old black walnuts, and it was absolutely out of this world just wondering if you made that.     I made this a couple weeks ago and it was amazing! I used the entire can of pumpkin and next time I am going to try a smaller in width, but deeper pan, which would cut down on the amount of frosting. It is rich, moist and just can’t recommend it enough! ❤

    Hi, for those of us in England its icing sugar in the frosting, also pumpkin pie spice has the same ingredients as mixed spice.I made this and it was so good. I made your pumpkin pie, I have to say I wasnt a fan but I sent for 2 cans of pumpkin so used 2nd here. The cake was lovely and moist and the frosting delicious.I find the cream cheese we get in the UK is much softer so I only used half the milk.😋

    The extra frosting is great to add on the side. I make the jelly roll with the frosting inside the roll. * The recipe is inside the label from the Libby’s Pumpkin Puree can. Add an extra dollop of frosting on top of each slice 😢chopped walnuts. Coffee is great to cut the sweetness.

    When we were young my Mom called spatulas child cheaters because they would clean every bit of icing off of the sides and bottom of the bowl. She had the double beaters mixer also. With 5 of us kids, we had to take turns. That was over 60 years ago but I can remember it like it was yesterday.🥰

    I share this with you because I think you'd appreciate it. Because of the cost of vanilla, about 2-3 years ago some good folks on UA-cam taught us to make our own vanilla extract. The real stuff. 1 liter of 80 proof vodka with 10 grade B vanilla beans (cheap from Amazon) slit lengthwise added to the bottle. Write the date on the bottle and leave it alone for about 1 year. Shake periodically. To really blow your mind use spiced rum in place of the vodka. Amazing, we have several gallons going all of the time. They make great gifts at Christmas. And the longer they sit the better they get.

      We tend to make it in the fall more. But it’s not an overwhelming pumpkin flavor so it would be good anytime of year, really. I love how moist it is.

    My stand mixer is an older one I had been wanting one for a long time and one day my son went garage salting and he found me one with all the attachments for $ 20.00 it worked perfactly,I was so happy and I gave him his money back.

    I love this recipe and all of your recipes, I'm from Kentucky too. Your cream cheese frosting is like my grandma put on her carrot cake minus the cinnamon and put in chopped walnuts yummy ❤ to you and your family.

      It’s never too late to start enjoying pumpkin. And this cake doesn’t overwhelm you with the pumpkin taste. It’s a pleasant, spicy fall flavor.

      Many African Americans prefer sweet potato pie to pumpkin. One year I bought a huge pumpkin on November 1 for fifty cents. I called my mother in law and asked her how to cook pumpkin. She said to cook it long and slow till all the water was cooked out. It made 5 lbs. I used her sweet potato pie recipe but substituted it with pumpkins. It filled 28:57 over a dozen single frozen pie crusts. After they cooled well, I wrapped them in clear wrap and froze them. We enjoyed them through new years and many of my friends didn’t even know the difference because I didn’t tell the ones I that I knew would try them if they knew the real deal. 😂
      I did confess after the pies were gone. ❤️😂😂😂

    It won't be long before Fall is back and I will definitely save this for some Fall gatherings. I love pumpkin pie and I have never done a cake with it, but you sold me with that cinnamon cream cheese icing! I'm guessing this will be wonderful 😋

    I have two of those pens I have intended to buy another two anyway but what I would do is use parchment paper on the bottom of that then you know it’s not gonna stick of course spray your parchment paper before you put your cake in and that’s going to help keep that it works a lot better with the parchment paper. Easier clean up too! 😊

    Way back when I was a kid even stand mixers had 2 beaters the single eater style came into being first in commercial use then later on for the home cook as well.

    I think it’s great that you give all the detailed instructions as for beginners. We have a couple of younger generations that were not given this instruction at home the way you and I were. When the youngsters learn these simple recipes it will give them confidence to cook. You know, so many young people have no clue how to do the kitchen basics. Sometimes I thnk they need something as basic as how to run the dishwasher and how an oven works. One of the things they’re most intimidated by is the chaos that ensuees when a big mess is created which needn’t happen.

      My nephew spilled some cinnamon into our pie filling one year. It turned out we all liked it Now I also put in fresh cloves that I grind in my coffee grinder and I also bought a couple of nutmegs that I grate on a grater stick. It only takes a couple minutes and really adds to the pie, cake or muffins
