i love japanese dishes like this. it leaves open so much customization to the person making it. you have your egg base but the rest is all up to you and your preferences. seems to be the thee for a lot of japanese cuisine
I think customizations are great as long as the person making them doesn't claim it's their invention and gives credit to the culture it comes from (for example, say Japanese inspired ham egg rolls or ham tamagoyaki, not "oh i invented this wonderful ham and egg folded blanket!! 🥰"), Especially if they're profiting from it in some way.

Just a note. Japanese cooking relies on 'undercooked' or raw egg, so tamagoyaki tend to have that 'oozing' look because they're actually undercooked. I'm not sure if you can do that with Canadian eggs but in Japan it's perfectly safe.
