5lbs sweet potatoes
2 sticks of @kerrygoldusa butter
2 cups brown sugar
3/4 cup sugar
1 tablespoon vanilla extract
1 tablespoon @grandmarnierusa
2 teaspoons @hennessy
1 tablespoon maple syrup
1-2 tablespoons cinnamon (based on preference)
1 teaspoon nutmeg
1. Peel and slice sweet potatoes into desired thickness (anything thicker than what’s shown will require additional cook time)
2. Melt down both sticks of butter, add in brown sugar, 1 cup at a time and mix completely between cups.
2. Add in grand marnier and Hennessy, combine completely, then add in all other ingredients, stir until completely combined and consistency is almost like caramel.
3. Add in sweet potatoes, toss and make sure each piece is covered and then cover with a lid and cook over medium heat for 10 mins.
4. Sweet potatoes make their own water so consistency of mixture will be very watery, stir, return lid and continue cooking for 20-25 mins, longer if you like your yams extremely soft.
5. Remove yams from sauce once desired consistency is reached and allow sauce to continue cooking to thicken, approximately 5-7 mins (until sauce coats a spoon). Pour over yams and enjoy.
