You cannot slice without direct contact with what's under the stuff you want slice, that's what "to slice" is. Contact of any metal on a Teflon will broke the protection of the pan and ptfe will leak. That's why in most of restaurant Teflon isn't use at all and if it append it's for a very specific usage and the pan isn't send to the dishwasher but handwash. Honestly if my chefs saw me do this they would have wash the pan with my head.

A PRO WOULD NEVER USE A METAL KNIFE TO DO SUCH A THING TO ANY COOKWARE. THE SAME EFFECT CAN LITERALLY BE ACHIEVED BY A SILICONE SPATULA.
