Rigatoni pie 🥧

- Ingredients
- 500g dried rigatoni
- 2 tbsp olive oil
- 1 onion, finely diced
- 3 cloves garlic, finely diced
- 1 long red chilli, finely diced
- 1 jar (550g) tomato passata
- 1 bunch basil, 1/2 picked
- 450 g of low-moisture grated mozzarella
Method
1. Start by cooking your rigatoni until it's just cooked, then drain it, and rinse it under cold water to stop the cooking.
2. Next, start making the sauce by heating the olive oil, up in a saucepan and sautéing the onions, garlic and chilli.
3. After 3 minutes, add your tomato sauce and stir well, once it starts simmering add half a bunch of basil still on the storks (this makes it easier to fish it out later).
4. Take a 20cm springform round cake pan and spread some of the sauce on the base.
5. Sprinkle a layer of mozzarella before arranging your rigatoni, standing at attention.
6. Once all the rigatoni is standing and nice and tight, pour over the rest of the tomato sauce.
7. Add a layer of picked basil leaves before topping it with mozzarella
8. Bake in a 180°c oven for 30 minutes or until golden brown on top

Same. Those are white unemployed with no kids' recipes. If I have that much time to make a regular dish, even without kids myself, it means that my dogs are dead and my gf is at her parent's.
No way I do tomato sauce and cheese pasta in the oven when I can make it in 5 minutes and do something else.
@GreyPunkWolf naw I'd say it's more of a, I don't know what else to make with the little knowledge of cooking I have, so why not? It's like baked Mac n cheese.

When I made this, I used a piping bag to make sure every noodle had some sauce in it. It worked great

Sometimes... Like right now, I'm astounded at the curious ways people chose to waste their time with the most pointless of activities.
Also, did you notice how this "pie" didn't look impressive or unique, it just looked like a cheesy, pasta bake thing... Then how it entirely fell apart when he served it... In the end it was just a plate of pasta, sauce and cheese..? Yeah. I noticed that too. 🥚
I’m not doing all of that work just to have the pie fall apart once I serve the dish. I’ll just stick with making traditional rigatoni bolognese in a pot. 😉
Needs more cheese to hold it together, and needs the noodles stuffed with something,otherwise, not looking great.

To all the guys saying he is using jarred sauce go to the shops and look at what he was using.... It's Passata which is essentially just pureed tomato's which is almost always used from jars or bottles and added to the sofritto (onion and garlic in this case) to make the sauce with herbs usually added later. Side Note: Mutti is one of the most well known Italian brands available. Nonna would approve!
Pre-made sauce always tastes like metal or plastic to me, it’s never the same.

Always grab a jar or can of tomatoes instead of a pre-made sauce. Tomatoes, a bit of salt and pepper and some basil and you're good to go.
I love how it starts off not caring about the pasta, and then the professionalism of cutting up the ingredients... always fun to watch!

@@daniellebarker7667 yes, this please... I was thinking that that pie was looking a bit dry, even if the sauce was probably excellent... Ricotta and meat would go amazingly, or do what I do with an outstanding beef manicotti recipe and mix some cottage cheese and a pinch of mayo into seasoned beef then stuff that into the pasta, sounds odd/blasphemous but is actually ballin 👍

Once bite into it. It falls apart and looks like regular rigatoni. Just skip the assembly and baking process.
Yeah I think it’s just a presentation/visual thing. I’d just skip the standing up the rigatoni step too.

Actually in Italy we have a very similar plate, it’s called “pasta al forno” and the ingredients are very similar, but we usually put in the sauce the “besciamella” which is a mixture of flour, butter and milk

Honestly, if you're not Italian, congratulations to the only foreigner who has managed not to make a mistake, indeed it looks very good. Then it also depends on how long you cooked everything. Always boil the pasta, it is not cooked in a pan or in the oven, it must always be boiled first. Really good perfect recipe to share rather than sharing wrong recipes.

I've been making this for decades@ i use ground beef too (sometimes sweet Italian sausage in it). So delicious!
I'd definitely add meat, but can't really imagine taking the time to stand up cooked pasta... that said, it's a nice presentation.

@@scharsch As long as they don’t call it traditional or authentic when adding things, I have no problems! Sure some Romans will kill you if you put stuff in the Carbonara that are not in the recipe! As a Roman myself, I don’t really care what you use (finding the authentic ingredients is difficult if you don’t live in the Lazio region)!
Also little piece of advice, don’t put certain seasonings on dishes without asking the cook. I had someone put Aromat on the Carbonara I made. It felt like someone punched me in the stomach! Plz don’t is disrespectful, Italian cuisine or not.
