Top man most definitely knows his stuff from start to finish cause what makes a top dish is a cook/chef that knows cuts of meat and knows how to prepare it before even attempting to wash and season it. Im well impressed.
Looks very delicious. I’m new to your channel as I was scrolling through. You caught my eye with this delicious dish. I love oxtail too but it’s so expensive in the USA 🇺🇸. I might have it once a year. I will be watching your channel now to see what you cook up. Have you made stew peas with corned beef yet? I would love to see that video. 😊❤
Thank you for checking out my channel. I agree the price of oxtails is through the roof now. I remember when the butcher used to give to me for free because he didn’t understand why I even wanted it 😂
Chef Bolo you sre not suppose to cut the fat off the oxtails. The fats are what you use to render the meat when cooking. Instead of using cooking oil you use it to fry the meat The fat is what give the meat flavour. I am coming from old school. It will eventually shrink after cooking.. Did you know you need animal fats? Like ghee, grassfed butter, lard and tallow. Keep up the good work. Blessings.
Thanks for the comment I understand you perfectly. I purposely brought it up in my video because even my immediate family members think like this, they would never ever cut the fat off either. But I cook 100’s of lbs of oxtail between my food truck and catering each week and I know there is no way to render that much fat without having oily gravy and fatty oxtail. Also it’s a preference that even my customers have come to love. That said it’s all love and this will be forever one of those issues that will never be resolved..from generation to generation 😂😂
GWAN GWAN my brother. I saw this on the homepage and decided to watch. I haven’t cooked Oxtails in years. Why? They’re not readily available in the supermarkets now where I live. I know it’s been a good 15 years since I purchased them. I would buy what I saw. I never had to trim mine but they still rendered a lot of fat after seering and cooked in the crockpot. Those teeny Scotch Bonnets were cute but too hot 🥵 for me. Question…if you remove the seeds and ribs of a Scotch Bonnet will that calm the heat? You can do that with a Jalapeño.
Yes some areas it’s difficult to get but it’s becoming more common. I’ve seen Costco has oxtail now. As with all peppers the seeds are the hottest part of the pepper, so you could cut away from the seeds for less heat. Green scotch bonnets will have the least heat and I don’t open or cut them when cooking because I want the flavor and not necessarily the heat
You got to grab a tiger by the tail oh wait a minute you got to grab an ox by the tail hope he doesn't exhale and then you can make yourself some oxtails s t e w pew and bring it to the pew whoopee whoopee
Yeah even your babies even your babies best meal even the little animals in the forest it is their best meal too the monkeys in the tree the pandas the Banditos everybody everybody everybody everybody ya we got to do this ya ya bring your buckets we will fill them
See I will feel very comfortable eating ur food because I know u r very clean u need to show these chiefs on the food network in the USA how to clean meats because I don’t understand why they don’t wash their meat off i don’t get it at all they just opened the pack of meats and seasoned it and cooked

That’s for content, I actually did a video (didn’t put it out) because I seen people saying it on social media. It’s like eating beef stew..not oxtail

👍🏾👍🏾 Yeah it’s definitely a preference..some like the fat (like a ton of my family members lol)
Ha pure fat u buy😂
Pretty much 😂
The fat must freeze for tallow…
Yes absolutely agree
Why are you cutting off the fat on the oxtail?
That's the best thing.😮
Personally I don’t like it and it makes the gravy oily. But like i said, some people love it
To each his own. I don’t like the fat on my oxalis either.
That's no oxtails all that fat they are pigtails😅😅😅😅😅😅😅😅😅
