  • It’s a great source of fibre because of the vegetables, can be customized as per the availability and choice.
    ▪️Roast 1 cup of thick semolina, keep aside.
    ▪️Add oil hing, 1 tspn mustard seeds, when it splitters, add 1 tsp Cumin seed, few curry leaves, chopped green chillies , finely minced ginger, and 1 tsp of urad daal.
    ▪️Once every thing is roasted properly, add chopped onions, once onion are translucent, add chopped vegetables, here I added a diced carrot, green beans and 1/2 a cup of green peas.
    ▪️Add 1&1/2 tsp of salt and cover it on low flame, until the vegetables are soft .
    ▪️Add the roasted semolina back to the pan,
    ▪️Add 2&1/2 cup of boiling water.
    ▪️A dash of lemon juice and 1/2 a tsp of Sugar and chopped green coriander
    ▪️mix it all up and keep it covered, on low flame.
    ▪️Put the flame off, fluff up your Upma, and cover again for 5 minutes.
    ▪️Serve hot with a bowl of cold yogurt.
