i got a great tip for your eggs. i use a wide mouth thermos or even a gatorade bottle. i crack all my eggs into it. i never have to worry about my eggs cracking in my panniers. when your ready you can pour the eggs out easily one at a time or you can shake the bottle for scrambled eggs
hi Staci - just wanted to say I recently tried this on the last rally of the yr in a wet cold October here in the UK . The smell of frying red onion caused at least 3 folks to stick their head out of their tent and ask what i was cooking, needless to say all of them went what?? including my riding mate. Needless to say it was super tasty and one I will be doing again. Thank you for sharing such a simple but tasty breakfast dish. Loving the videos and the channel content given the weather here in the UK is lousy. keep up the good work
Being a Brit the idea of eating anything more than a slice of toast and Marmite washed down with a mug of tea never really sat well - that is until I discovered huevos rancheros at the Bike Shed, but the question was always how to cook it while camping, and whilst it's not quite the same, this looks like a pretty good alternative to try out. Now I just have to do the American to British English translation, trust that Sainsbury's sells enchilada sauce in a can, and I can enjoy getting spicy in the morning too. Loving the videos, I'm getting more and more of a desire to ship my Triumph Scrambler over and have six months exploring just a few of the roads stateside.
I watched this a while back and had to come find it. Im making this at home for breakfast tomorrow. I always try to make a meal at home several times before getting to camp and realizing I'm missing something. Looks so good. Thanks for all your content.
Rad! Thank you. I also have it available as a recipe on my blog If you ever need to reference it. I make this at home fairly often. Always a good one! Enjoy!!
Looked great.. but then it is 12:01 and I'm darn hungry.... fear that I wouldn't even wait for the eggs to be cooked. Bravo on the "presentation" with the avocado!
I am really enjoying the camp cooking kitchen demos that you have been doing the past couple of episodes. I love how you diversify the content on your channel, great job!
Such a great job! Really like the camp kitchen videos, they are really fun to watch. I agree gourmet cooking on the road is not the easiest but when you pull it off, it is pure magic. Thanks so much Staci!
How, in my 49 years on this planet, have I never heard of this recipe?!?!?! That is DEFINITELY getting added to my list! Thinking of some spin-offs of the recipe already; cheese and black beans would be good. Maybe even some refried beans. It's 8:30 in the morning here and now I'm starving. Thanks Staci!!
I’ve watched this 3 times. Like most of your videos, but the set up break down of sites and food tend to be very calming and I love it! (And your history snipits in everything else)
Oh, Man! That looks SO good! A great job on the How-To video keeping it simple and straightforward. Breakfast is my main meal when riding, so this is a perfect way to get my long day in the saddle off to a great start! ThankYou, ThankYou, ThankYou!! If you have a fave Huevos Rancheros recipe, please do share!
Hi! I just found your channel, not really sure why I started watching (I'm definitely not a "foodie"), although I do a lot of motorcycling (dirt bikes mostly) and camping & I am always struggling with food options.. I'm lazy and travel solo most of the time, so I enjoy seeing what you come up with for good food (vs my usual boxed junk). The fact that you ride some of my favorite roads is a bonus! (I lived in the Colorado mountains for 3 decades)
Rad!!!! I definitely splurge a little on food when I’m in “established” campgrounds. When I do dispersed camping I keep it a little more simple just for the sake of keeping the area clean 🐻 I’ve always wanted to ride a dirt bike. Would be super cool to dirt bike and camp in Colorado!
@@ridetofood You definitely need to try it out, so much fun :) My advice would be is to travel as light as possible, stay at B&B's vs carrying camp etc.. smaller bike, maybe a 400-600cc single? Honda XR is hard to beat.... just don't get some 400#+ "adventure" bike that is so heavy that it limits what roads/ trails you can ride ;) So much cool stuff up in the Colorado hills! Ride safe, hope to see you out there someday!
Solid little recipe. I'll definitely have to give it a try. The apartment I'm in temporarily has an electric stove. It's been forcing me to get out my butane flat top, or Coleman white gas cooker. Basically, everything I make now is a camp meal, but in the kitchen. I'll try this recipe soon.
Wow Staci! Chilaquiles looks awesome! Thank you for taking the time to film explaining your process! Awesome 😎🇺🇸 PS: I just pulled down my motorcycle camping gear taking inventory and to air out my tent... Thank you!
This is a most perfect channel. Has everything I love. From the host personality/voice to the bikes to the trips, scenery, outdoor, travel by motorcycle ,beautiful everything. Food, cool personality ,gorgeous person in and out and doing adventures solo. Perfect channel. If Tea Leoni was a badass. Lol 🎉Great content and creator. Ok I'll stop. Lol safe riding
Staci, I haven't watched the video yet, the commercial about knives is running. But, I am happy that you are trying cooking on the bike. Those backpacking meals hurt my fat guy soul. Keep it up sister, I can't wait for the reveal in a few days. KEEP IT UP!
And this is quite an interesting idea and a good recipe, it looks quite appetizing! And avocado 🥑, like a cherry on a cake, gives this food grace !!👍👍😉😋🍳
That looked tasty as hell, I will try it next time I go camping, I hear you on the sauteed onions never too many, especially with sauteed green or red peppers. Thanks
Actually had this for dinner on the side about a hour before I say your video. Different style with green salsa and feta but yours sure looks good with the eggs.
So happy to see the videos! Got the season's bike mods done and scouting trips already. It's mud season in Colorado but looking up from winter. Great video and love this content. Your travel & eatery reviews are great too, what hooked me on your channel in fact, but this and the camping content is great to see in the mix!
Glad you’re enjoying it! Still will see travel videos and normal food on the channel, but just gonna expand on my “foodie focus” lol! Season is almost here!!!
Staci, that looks amazing! I can practically smell the food from here. Also, I still love your ride to food coffee mug. We’re heading back to the Smoky mountains in June, that cup is coming along. Ride safe!
Thanks, Staci. I love chilaquiles at home, but I'd never considered making them at camp. I will be doing just that next time. I do the eggs stirred in method, topped with cheese or Mexican cream. Larry in Fort Worth
Some cheap rubber garden gloves would be great for cooking. I bought a pair to handle my pot when I’m motorcycle camping. I’m also thinking of bringing a wok with me next time.
Hint about eggs I've learned over the years. Store bought eggs fit in those yellow egg holders very well. Fresh eggs straight from friends with chickens last longer, but the sizes vary. I've had fresh eggs just get destroyed in my egg holder.
@@ridetofood the friend who freeze dries my food for camping gave me a goose egg one year. I had no way to carry it. My buddy who does the navigating (I'm the food guy) seems to not recognize the dirt roads from the paved roads on maps. Taking a Kawasaki Vaquero and an Indian Challenger off road is an adventure all in it's self. We just destroyed the eggs.
Hello Staci, me ha encantado el vídeo però mas la comida que te as preparado. Heres una crac de la cocina. Contigo si se puede salir de càmping.😋 😂👍🍻🍻🏍️🏍️

Yeah, that's enchilada sauce ALL over my face. 🤣 If you end up making these, let me know! Seriously such a good, filling breakfast!
I made Achilles chilies for dinner. Just now. Thanks
