4 stages of playing DMC
1 - you're not used to the mechanics and enemy attacks so you flail hits and get hit all the time
2 - you're good to the point you can dodge most attacks and execute some stylish comboses
3- you're good, dodge all attacks and stylish combo on everything game throws at you
4 - you're so good you can ignore enemy attack patterns altogether and just flail at them

I think he did use Gerbera’s jocky/deflect for one parry, and then he used breakage to switch to Rawhide, and parried with Rawhides whip move.
gerbera parry twice-> break away and side dodge-> breakage rawhide parry once

He deflected Goliath's projectile using Gerbera's standing attack. Most attacks can reflect the giant fireballs that Urizen and Goliath shoot at you, but Gerbera's neutral move is specifically designed as a projectile reflector.
