I finally know how to make one of my favorite dish. Made this last night and it turned out so delicious, and looks exactly like what I order at the great restaurants. Thank you so much Rosellla!

Omg this is my EXACT recipe ive been using for years. Took a while to test the best ratio and timing but this is the way! Everyone says i make the best marsala, so I KNOW this one has to best amazing!
Why do you guys care if she put the spoon she ate from back in the pot. I cook for my family everyday and you better bet that’s how I taste things so. She’s not serving it for a restaurant so relax. Great recipe. And very cute kitchen
Victoria Adelaja Good morning, I’ve been cooking for 50 years for my family and friends and don’t see tasting for seasoning no different then giving mom a lovely kiss. I wish mom was around to give her just one last kiss. Where does the time go? Just saying
I love your videos Nonna and i'm going to try this chicken marsala recipe it looks delicious. I have a question when it comes to cooking with wine should you cook with a wine that you would like to drink or doesn't it matter seeing how your cooking it or is the wine that's used for cooking just a cooking wine? I'm not worried about this dish seeing how it's chicken marsala but some of your other dishes... Thank You keep doing your videos I love them...
I agree with you Rossella, 100% delicious! My dad was from Sicily (Giarre Riposti) so marsala is always in our home. I will have to revisit this recipe for the family. Thank you :)
I have been looking for this kind of recipe for a long time. So glad I found yours. When ever we ate at the Olive garden, this is what I ordered. My best friends father was Italian. He came to visit my girlfriend from New York. That was the first time I tasted this dish and fell in love with this recipe. My whole family loves lot of gravy, so can I double the Marsala in order to have more gravy? I believe he served this dish with rice on the side. What do you use as a side dish? Its been a long time since I ate at Olive garden, because of the covid virus. For some reason I can not find Marsala in our stores. I surely don't want to order one bottle online. I would appreciate some help from you, about how to make more gravy and what to use as a side dish. I guess I could use noodles also. Thank you for sharing this recipe with us and I hope to get a respond from you. Gigi Hammer, a German born women living in Texas now. I'm not sure, but I thought you also use some heavy cream.
Wonderful video Rossella. In the past I never liked this dish but your dish looks so great, I am going to order it when I go out to dinner tonight. Hopefully it will taste as good as your dish looks. Lol. By the way, what do you call all of the bits on the bottom of the pan? I couldn't understand what you said in the video. Ciao
Hope the guys over at Pasta Grammar see these videos and change their view of Italian/American cooking. Yes, some of what’s happened here is too much especially with portion size and the addition of fats but as is seen here sometimes it is new and actually gives a delicious perspective of the possibilities when our culinary cultures mingle. After all I’m sure the Italian purists were appalled when the tomato was introduced to the national menu 500 years ago.
I've viewed several Chicken Marsala recipes online, but I'm going to try your's Rossella. This one to me looks like the best overall. Plus, I really think you could have played the part of Mary in The Godfather III, well, had it been filmed now...otherwise you would have been just a tot! I have subscribed, love your style...and we Italian American girls have to stick together! Ciao bella!
Looks superb! I know what I'll be making this Weekend - one question though. You said Marsala is a DRY wine - then you said you "love the sweetness" of the aroma. Do you use Dry or Sweet Marsala?Also.... "ButtA" not "Butter" ...... Brooklyn Girl? :-)
Every time I’ve ordered this dish in an Italian restaurant, it comes out all greasy with very little sauce. Swimming in grease though. I’ll make it at home from now on. It’s so easy.
I was watching your Chicken Masala Video,,the word Masala what you mean by that . Masala (is a hard spaces) in Indian Word you have not add any Masala ,, like to hear from you,,,, Thanks 🙏
I love trying world foods and this looks so good. But due to religious reasons, we do not use alcohol in food making. Although, alcohol do evaporate but i want to know if there is a non-alcoholic substitute for marsala wine?
I bought your book when first came out been using it ever since. But did you just taste with wooden spoon and continue cooking and stirring with it? Yup that's what my Nonna used to do..lol
@@janetsaulsberry4696 hi, i asked the Same question. I got a Reply saying it can be bought in the market and I looked and it Was there, at Stop N Shop !
why is it that i see so many recipes that add flour by just throwing it in but when i do it i get lumps? i stir it well but i can't seem to get rid of them so instead i dissolve the four in a little cold water first and add it. i would like to eliminate the extra dish to wash though. i can't wait to try this recipe.
If you're getting lumps try turning off the flame before adding the flour and stir it in with the residual heat of the pan. Serve as soon as it's incorporated. Sometimes stirring it too long over the flame after flour will dry it out too much and cause lumps!
i know this is an old comment but I wanted to chime in. you can just wisk the flour with a little bit of the sauce in a separate bowl and then add it to pan. you also need to let the flour cook so it will not taste like raw flour.
Rossella, your Marsala looks top-notch - would give anything to taste it. Say, by the way, have your ever uploaded a video of your making chicken saltimbocca? If not, would love to see one from you. My ideal saltimbocca is the version from Buca di Beppo, which features a lemon-butter sauce with capers and artichokes. Think you could see yer way, if you haven't yet, to making chicken saltimbocca one of these days?
This dish doesn't call for garlic... it needs the sweet essence of shallots. Also increase the amount of marsala and chicken stock, giving us more sauce. Toast a big slice of Italian bread and serve by placing the chicken on top of that. Sprinkle with a teaspoon of finely chopped fresh parsley and...voila.
The sauce reduction takes so much longer if not using that added flour you cheated with to thicken it. Most recipes for Marsala you will find don't use it as a thickener.
Its so hard to find a good chicken marsala. Everyone makes it so watery. I live in nj but drove up to long island ny a couple of times. they have hands down best chicken marsala ever!! It has bacon in it too!
One of my favorites. She is a beautiful Queen. She knows what she's doing.

low heat or high heat?
Can we use marsala sweet ? I am from romania .
Did this and Delishamundo!!!

I'm late, but use DRY Marsala.
Where can I find the recipe?
Rosella, could you add a veal or chicken piccata recipe?
The first time I had this was Miami and the chicken had like a light fry dough coating ugh best ever, but never found it the same anywhere 😔
Just drench the chicken in flour once than in beaten egg and flour again and follow this recipe.
Thank you so much!!! No More Fried Chicken!!!!
Beautilffly done!

I could just eat Mushrooms Marsala..love 'srooms..lol
Your gross!
No he's not , I could too dummy !
Looks really tasty, gonna try it and let you know how it comes out. Is there any substitute for the wine?
No, the Marsala wine is the key ingredient here!
Okay, thanks again. Have a Happy Thanksgiving

If it's an alcohol objection, know that the alcohol evaporates during the cooking process.
I love trying world foods and this looks so good.
But due to religious reasons, we do not use alcohol in food making. Although, alcohol do evaporate but i want to know if there is a non-alcoholic substitute for marsala wine?
Samrah Zainab Holland House makes a Marsala Cooking Wine. Could you use that? If not, use broth, but it won’t have the unique marsala flavor.
my family is from Catania
No gravy? For dipping my bread?
Would have seasoned both sides
I bought your book when first came out been using it ever since. But did you just taste with wooden spoon and continue cooking and stirring with it? Yup that's what my Nonna used to do..lol

John Di Francisco You should dip your butter in flour before u drop the butter in
A little Italian, a little American but 100% delicious!
whats the hardest thing you've made?
Joseph Ruthenberg what do you mean the hardest?

this looks sooo yum.
also can I use something instead of alcohol???
and can I serve with rice?
Emytothee22 replace the alcohol with broth. Yes you can serve with rice if you want

You have great lighting, nice kitchen and the recipe looks GREAT! Please just make it more concise.
More concise = less time on screen for Rossella. Are you crazy? I could look at Rossella all day long.
Really like your process of making Marsella its nice and dark. Compared to Laura in the Kitchen.
At a glance you look like Kim K.
No need to insult her...
Looks delish except I would have used probably 3 times the mushrooms. I want a shroom in every bite. LOL
I think I would add some shallots. Other than that, great recipe. Thanks!

The sauce reduction takes so much longer if not using that added flour you cheated with to thicken it. Most recipes for Marsala you will find don't use it as a thickener.
