Rossella and her Nonna Romana make the classic Chicken Cutlets the way Nonna makes them. Then Rossella also makes her own version of Chicken Cutlets.

I had company tonight and I made this recipe. No Italian groceries where I live, so I froze the chicken breasts for a few minutes and sliced them myself. Everything else I did exactly as your nonna instructed. Needless to say dinner was perfect. Thank you both for being a part of a very happy evening here in my own back yard. Every bit of happiness we have in this world is a treasure.

I make these the same way :) delicious and so much better than frozen breaded chicken!!! It is so nice to see you cook with your grandma, I grew up cooking with my grandma and grandpa too.
This was my favorite food as a child.

As a kid, Grandma always made veal cutlets this way...I'm gonna try the chicken like this..Cheerz!!!

Your nonna is sweet. That is exactly how I make my cutlets. Been doing them like that for years. I did try panko bread crumbs once, it was good but not the same.

Cutlets are great leftovers to have in the fridge! Even when I'm by myself I never have them leftover for too long!!

I pretty much make them like Nonna except I don't salt the eggs but add a little salt and pepper to the crumbs. I use a little more fresh parsley than that. Also I use my hands to dredge or press and the garlic and parsley adheres better.

Cymbaline yes they will still be good!
Of course the frying method is king mmmmm. Lol. But when you're baking them it's best to dip them in olive oil and then in the same breadcrumb and then on a cookie sheet in the oven at about 400° until they're golden brown also another method dip them in the oil and the bread crumb of course olive oil and then on a very hot Grill skillet just Grill them up that's one of my favorites I even like to use my George Foreman Grill when I do them this way

I'm wondering...do you use plain dry breadcrumbs in the canister from the store or do you make your own?
I usually use the plain ones from the store. If I have the time and extra bread I'll make them, but usually I use store bought ones. You can buy the clay pots at La Bella Marketplace. They have locations in Brooklyn and Staten Island. Unfortunately they aren't available online, but if you call the stores they may be able to ship one to you.

Good Job! But you should have Nonna do more talking.....she hardly said anything.
Baking at high heat is a far superior method to soaking the cutlets in hot oil bath. There are thousands of better Italian chicken cutlet recipes out there in UA-cam land., people.
Respect your Nona, you narcissist! Watch how you speak to her! Replay this video and look at how you interact with her. She is what you will never be. Show some reverence for her time honored ways. It Really irks me when young things speak down to their grandparents in a subtle condescending manner as if they can do better, etc... Let Nona have the spotlight.
K Bhogal this is the traditional Italian American preparation. My grandmother has been making Cutlets this way for years and they’re excellent.

Once you mix it well it distributes. I've never had a problem
