    After making the sponge cake, I'll be making a strawberry puree, and in the final video (3rd ) we will be making a stunning strawberry shortcake, a French inspired version called a torte fraisier.
    This was one of my favorite cakes to make while in pastry school a long time ago.
    Bake time on this cake was approx. 45 minutes.
    Check with a wooden skewer around the 30 to 40 minute mark in your oven to see if it is done.
    Time will vary depending on the size of springform pan you use.

      hi i have an issue to have a high sponge cake i do all the recipe like you did it but it always have a small cake not raising sponge one ...pleeeez help

      Nanorabi Orabi Hi Nanorabi, it's not a necessary ingredient, but there are some sponge cakes that use baking powder, you could add in a good 1 or 2 teaspoons of baking powder, it will help out. True sponge like this is not an ingredient, but add it in, and it will help you. Sorry for the long delay in replying :-(

    Hi! I just finished making your sponge cake and I am so thrilled with the result I had to post this imediatelly! This recipe is the best I have tried (and I have tried lots!). The cake turned to be super fluffy, kept its "thickness" when it cooled off and got out of the pan with no effort leaving no marks, not sticking to anything....Amazing!
    I used 5 instead of 6 eggs and self rising flour instead of simple. Also I put half 30-40grams of brandy and vanilla essence! Thanks again!

    I used your hamberger buns recipe and shaped them rectangular like ciabatta rolls and followed all your directions to the "T". I am happy to say everything turned out wonderful. Crusty tops with a beautiful browning and soft moist inside. You are the only one I want to follow now for any cooking recipes. You make everything so easy to understand. Trust me...I need "easy to understand" since I've had a stroke and my memory is not so good. I took notes watching your video so I wouldn't forget anything you said to do. You are amazing!!!!     Thank you! The sponge cake turned out great. I even added some cocoa and it was a perfect chocolate sponge cake!
    I really liked it because there was no dairy and we had a guest coming that is allergic to dairy products.

      Your question really confuses me. *NO* I did not use baking soda. There is *NO* need to use any chemical agent to make the cake rise... the magic is in the eggs. You did watch the entire video ? Also - I have a MINI version of this cake recipe here on UA-cam. - same recipe, but smaller. I do *not* use any baking soda or baking powder. Sorry, but my videos are 100% complete, when somebody asks me a question like this, it usually means they didn't watch the entire video or they skipped through it.

    I tried other recipe of sponge cake? it ends up like had leche flan.. can you describe the finished product? is it similar to chiffon cake? I'm new to baking. thanks

      +WuZunELLA 1 cup of flour is 150 grams. 1 cup of sugar is about 200 grams. ( this is for granulated white sugar ) This is what I base my recipes on. In NEW recipes, I always use both the British Imperial system of measurement, and the Metric system, and that is for all new recipes on my channel here. If you go to my new videos, you'll see me measuring out a cup of flour, a cup of sugar etc. I hope this helps you :-)

      +Michael Jared Hi Michael, did you sift your flour in ? and did you do it a bit at a time ? also what type of electric mixer did you use ? and did you get a really high volume when you whipped your eggs ?     Hi, Please watch the video, I do not use any fat in this recipe. I'm assuming by your question you haven't watched yet :-) This type of sponge does NOT require any fat, sponge like this is lighter without any type of fat. Fat makes a cake heavier in texture. The eggs are all you need in this recipe. Please watch this one, or my newer sponge video which also uses the same recipe.

      Hello, yes, this is the most pure form of sponge cake. It contains NO type of fat. No butter, no oil. Fat ( butter or oil ) in any cake makes the cake more heavy. If you wish to have oil or butter in a sponge cake, then you want to look for a Victorian sponge cake. It also contains a leavening agent ( baking powder ) If you wish to see excellent results with this recipe here, but in a mini version... please watch my MINI vanilla sponge cake recipe: ua-cam.com/video/C8aZ783k5oY/v-deo.html
      ( this is the same recipe but it makes a very small cake )

    I baked this cake in a 10 in pan. Did not run over sides. The cake turned out really great.
