Ingredients:
For the Dough:
2 cups all-purpose flour or whole wheat flour
½ tsp salt
1 tsp cooking oil
Approximately ¾ cup room temperature water
For the Filling:
2 medium potatoes, boiled and mashed
½ tsp salt, or to taste
1 green chili, finely chopped
½ tsp chaat masala
½ tsp roasted cumin powder
1 tsp coriander powder
½ tsp Kashmiri red chili powder
¼ tsp black salt
2 tbsp fresh coriander, finely chopped
Additional Ingredients for Layering:
Additional Kashmiri red chili powder
Chopped green onions
1 slice mozzarella cheese
For Cooking:
Cooking oil, as needed
1 tsp ghee (optional)
Instructions:
Prepare the Dough:
In a mixing bowl, combine flour, salt, and oil. Gradually add water and knead into a smooth dough. Cover and set aside for 30 minutes to rest.
Prepare the Potato Filling:
In a separate bowl, mix mashed potatoes, salt, green chili, chaat masala, roasted cumin, coriander powder, Kashmiri red chili powder, black salt, and chopped coriander until well combined. Set aside.
Roll and Layer the Paratha:
Divide the dough into four equal balls. Roll out one ball into a thin circle.
Lightly brush the surface with oil. Make a single cut from the center to the edge.
Visualize the circle in four segments:
In the first segment, sprinkle a bit of Kashmiri chili powder.
In the second, spread a portion of the potato filling.
In the third, add chopped green onions.
In the fourth, place a slice of mozzarella cheese.
Shape the Paratha:
Apply a dab of water along the edges of the circle for sealing.
Carefully lift and fold the segment with the chili powder over the potato filling. Continue folding, moving in the sequence until all segments overlap.
Press the edges together to seal and gently roll into a triangular shape.
Cook the Paratha:
Heat a pan over medium heat and place the paratha on it. Cook until the bottom starts to brown and then flip.
Optionally, brush with a teaspoon of ghee and continue cooking, flipping occasionally, until both sides are golden brown with crispy spots.
Serve:
Serve your delicious three-layered aloo paratha hot with your favorite sauce or enjoy it on its own.

It would be better if you used shredded cheese rather than slice and spread it on the whole paratha, than it would had combined with other ingredients and tasted well ☺
