    So many cultures make dumplings stuffed with ground or minced meat and everybody loves them. I have made potstickers, ravioli, pirogies with venison and served them to a wide range of guests. Serve them steamed or pan fried with dipping sauce, boiled floating in venison broth or covered with mushroom cream sauce, tossed with caramelized onions, bacon and sour cream and on and on.

      Same! Made some with store bought wrapper dough and elk. Seasoned the elk with garlic, cabbage, carrot, soy sauce, chili. They were gone so fast.

    I love how Kevin is so passionate about what he does. His enthusiasm for cooking is how I feel when I cook something new. Awesome focus to detail and explaining not just how to cook the food but how the individual ingredients come together as one.
    Always love watching you guys hunting but Kevin cooking definitely forces for a “stop what you’re doing and watch a half hour of cooking”

    Kevin does it right and talks about it right. Te only reason I got into deer hunting was to eat deer. Growing up I didnt hunt deer a friend introduced me to venison and it was on ever since then. KG needs to make a cook book for all these recipes.

    Lifetime hunter, can confirm at least 30% of every deer I've ever hunted have been turned into meatballs, chili and or ground steak with gravy.

    I saw Kevin Gillepsie and Steve Rinella on one of the cooking episodes do a complete wild boar meal which looked and I'm sure tasted absolutely delicious!

    I never hunted in or around a city or town...until my house burned down a few years ago and we decided to just rent an apartment and it has an Acre of woods and surrounded by corn, soy beans etc farms. My landlord told me I didnt need to drive to camp...just bow hunt in the back yard. Well it was a great Idea....we happen to also live near a creek and a choke point....I can sit and be picky and just wait most days. And since they are basically wild but also farm fed...they are big, fat, healthy. Taste great. Nothing wrong with Urban deer.

    You can honestly sub deer for anything that you would use ground lamb or ground beef for. I've even made kibbe with it. The only consideration I've ever experienced is whether to add fat or not. I add fat to all my ground deer, but sometimes it's not enough for every application. If I'm grilling deer, I make sure that I have adjunct fat to baste or add to it (in the case of burgers). If I'm using it in sauce or as part of a larger dish, then it's less necessary.
    KG is 1000% correct that you can use it for more than red sauce or chili. And to be honest, part of what made me start hunting again was watching Meateater on Netflix. Also, I promise no one asked me to say that :)

    Thank you for these videos.
    From health perspective, olive oil is bad for frying. The fats inside it oxidise easily.
    Animal fats are much better.

    City limits and so under rated and are nothing but a gold mine! I was vary skeptical the first time I was invited to hunt a small parcel in town. Was blown away by the amount of deer in such a small area and how healthy they were. And how they always say that they are destroy their environment to over population it was vary clear ots true

    I really like their cooking videos, but they talk about how normal deer hunters make easy quick to make meals with their ground venison. Then they turn around and make a very exquisite meal that i will never make in my lifetime.

    In my humble opinion, if you have to put that much effort into making ground venison palatable, it's not worth it (btw, you lost me at cinnamon in a meat dish). I put my effort into the butchering process, so the meat itself does the job. To each their own, I guess. I'm a huge fan of MeatEater!!

      It's not about making it palatable, it's about making a certain dish, that COULD be made fine with beef, but making it with venison. Also, a large portion of the world uses cinnamon in meat dishes. I guess you're just used to very American-centric food. 🤣

    99/100 I love Meateater content. This is no different. However, I think this recipe has way too many steps for me, or even the average deer hunter, to attempt. I love the idea of something other than chili tacos and pasta sauce, so perhaps do this again with a more achievable recipe.

    I've watched a few of Kevin's videos and there's one theme that always plays through.... Add way too many flavors, textures, and other components to completely hide the wild game. It's beautiful meat, it was hard earned, please try to make it the focus, the front and foremost part of the dish with its own flavor. Stop covering it up. You're doing the meat a huge disservice

      @@D_Boone sure, use it as a substitute, but I would say I treat my beef, lamb, and pork similarly. My meat is all hard earned and my preference is to make it the "star" as you say. Being able to tell what you're eating in a dish seems to be more respectful of whatever it is you're eating. I'd say that for some veggies too. Don't turn everything into a conglomerate

      The main show is literally the exact same as it has always been. hunt, butcher, and eat at the end of the episode. This is just their additional web content throughout the offseason when the show isn't airing.
