Fluffing the egg whites is so much better than adding cornstarch for structure. You just made low carb egg foo young patties without even trying. Amazing!

I tried this method and my patties came out PERFECT! I added broccoli to mine but the patties kept their shape, were fluffy and much easier to handle while cooking! Thank you!!❤
Hey sis, I learned a trick from my aunt, who learned it in culinary school. Use the biggest whisk you can find and a large bowl. Egg whites whip to stiff peaks in half the time.

I love egg foo young and use to make it all the time in Texas. I lived where there were lots of Asian markets and fresh bean sprouts. Today I live in a small town in New Mexico and finding bean sprouts is so hard. Believe it or not, I can find them once in and while at a market called Sprouts in Albuquerque. I think it is time to drive to the market and buy ingredients for Egg Foo Young!! I really what to try your sauce with it. Thank you!
The mung bean sprouts here in grocery stores are awful, Tennessee. Just grow them, wash the mung beans, soak, rinse them once a day and keep in a dark place you can make with a piece of aluminum foil to block the light. Buy two matching plastic containers, make holes in one (the inner one with the beans) take this one out daily and rinse both then put them back together. Avoid the gimmicky advice wanting you to buy stuff and kits, it is super easy and tutorials all over online. If you want straight sprouts look for tall containers that will grow what you plan to use in a week or so. Discard unsprouted beans early and hulls, pinch the roots when done (much easier when they grow straight) and enjoy fresh bean sprouts for pennies on the dollar over inferior store bought. One caveat though, you have to keep the containers clean and rinse daily or bacteria and mold can set in. and really wash the containers well in between batches.
You should try sprouting your own mung bean sprouts ! It's fun and super easy. I sprout mine in a quart Mason jar but the options are endless. Plenty of UA-cam videos for doing your own. It only takes 3 or 4 days to do a jar full and they will keep for a week or more in the fridge. Good luck
I once had a friend in Houston, we worked in an office on Post Oak Road. There was a little Japanese Food place near there that was our hangout. At that time I wasn't crazy about Egg Foo Yung but he ate it 3 times a day. After a while I got hooked on it, too and before I knew it I was hooked on Egg Foo Yung, too. He is gone now bless his heart but the Good Lord Is keeping me here for some reason, I don't know why? To give the young Doctors an old man to practice on I suppose. I’ve always mixed the eggs normally- I’m so happy to come across this vid separating the eggs, that was my missing piece to my puzzle, super excited to try this!! I make my gravy with some of the leftover grease and add onions, I live in Vegas from Michigan and I really miss the Chinese food back home, so I’ve been trying to perfect this for a long time, omg thanks again!! I also love love love that you didn’t add carrots or peas or broccoli or cabbage! People who do that have no idea about real Chinese food!!!

So, Glen and Friends Cooking, got a copper bowl for whipping egg whites, and he’s very impressed with how much easy and better the whites whip in it as opposed to a glass or china bowl. U might get to feeling rich and get one! I’m still hesitant but I am a home cook, and rarely whip eggs, whereas you would get much more use from it. TFS.
A wonderful simple recipe but especially that super hand held mixing of egg whites was fun to watch and realize who needs a mixer..great idea for an outdoor camping dinner minus shrimp💯👍
