    What happens if the honey is never removed from the hives in a natural setting? I have 2 huge separate hives they have built. One is in a concrete cylinder and the other is by some trees. I’m not a bee keeper and I don’t want them killed. I wish I could get the honey but no way I would attempt it. I’d be too afraid to mess up the hive and then they die or leave.

    How do you know when to harvest?

      After the honey is capped off the moisture content is correct. If you harvest honey that is not sealed it will have too much moisture and can go rancid. Usually August is a good month to harvest in the northern United States.
