The Flat Head catfish legendary tale is told coast to coast; a diver near the dam came bounding out of the water because he ran into a Flat Head twice the size of the diver and a mouth two feet wide that could swallow the diver whole. I have fished almost every south-east coast state and have heard this tale in almost every state. The largest Flat Head I ever say caught (and landed) was on the Waccamaw River in South Carolina and he was four feet plus change, and weighed in at 94 pounds. The Blue Gill or Sunfish is their primary prey but in most east coast states it's illegal to use game panfish as bait, and no artificial lure or cut-bait in my experience has ever worked for these smart and picky eaters. One of the reasons I've never caught one is I like to eat the bait as much as the flat head does.

Lake Ontario in Rochester NY area...36lbs King Salmon - fish hit as a storm was coming in....35 min "fight" went from flat calm tl 3 footers. Miss my Grandpa. It was the first year he had his dream boat, a Grady White.
The whiskers are feelers they have taste buds on the hole side they have more taste buds in a square inch then we do. Big cats like small bait too easer for them to swallow ive got more on small bait than big.
In my part of Arkansas, we have a creature called the White River Monster, it's an aquatic version of Big Foot. It ranges from Batesville down to Clarendon. I've heard the same tales of divers going down to inspect bridge footing and coming out of the river swearing to never to dive in the river again, because they ran across a catfish that was big enough to swallow a man whole.
Same here in New Mexico. There's a lake called elephantbute and it's been reported that people have went scuba diving and bumped into some huge fish that were the size of a station wagon and never again did they step foot in water again

Bullhead catfish are supposed to be good to eat also, but they're small. Used to fish above Imperial Dam by Yuma and Winterhaven every spring with my Grandfather.

Y’all need to get on a sport boat out of San Diego and get on some blue fin. I thought those big catfish fought hard until I hooked my first tuna. That was a nice flathead.
Get you some Slap Ya Mama seasoning, you'll thank me! I put that on everything now. Another awesome way to eat Flathead is 2" cubes of meat breaded with spicy breading and deep fried. Nothing better!
Make a blueberry cream sauce for fish. Mix Razzmatazz liqueur or blueberry liqueur, butter, half and half, diced onions, and a little bit of lemon juice, then add berries . Serve warm over any broiled, pan-fried, or even deep-fried fish. Your welcome!

The same story was told about Elephant Butte and Caballo dams in New Mexico! I've personally seen catfish heads on fences here that are two feet wide inside the open mouth! They drained Caballo in the 80's and left a stream running through- you could see huge cats slithering in the mud from the shoreline but couldn't get anywhere near em!
Honeywell lake in NE Missouri has some big Blue cats. The biggest we took out was a 38 pounder. But it was a little 7# that gave me trouble. As i reached to get it off the hook it flopped and the 2nd hook caught my finger. My buddy pushed it through with the pliers, snipped off the barb and backed it out. I wrapped it in a piece of my tshirt and was back to fishing. Good times!👍

On those thicker cuts.... I was typing it out at 19:44 when you said it. You can pretty much always split the fillets down the middle so they cook faster and more even. I cant see any way that fish wasn't thoroughly cooked. Cooked up nicely on the grill then 20 minutes in the oven, no chance that it didn't come to temp. Even then I doubt it'll make you sick, just some parasites maybe. 🤣
The flatheads come up to the banks at night to feed. Limb lining is the best way to get the big ones at that time. During the day that method your using is the best.
Several years ago Silverwood lake in socal needed some repair work done near the dam. Some of the divers said they would never go back in the water as the fish were scary big.

Fishing the LaPlace LA spill way by the dock under the I-10. Catfish rig pole in a shore holder. Chilled out in the shade from the heat of a Indian summer of September. Alligator gar hit so hard rod went straight into the water. All I saw of it was tail fin bigger than my ball cap.
Heck of a lot of fun. The largest cat fish for me was a 54 lb Blue Cat on a trotline in the Osage River about 1 mile from the confluence of the Missouri River. Used Asian carp cut bait.
That's what I fish for a lot when I was on the lake. Never caught a 30 lbs er though. 15 is the biggest I've caught. Personally, I would have kept that big 30 and fed the neighbors lol. Awesome catch guys.

Along swims a catfish, he swears as large as a city bus. 40 years have passed since I still don't believe it.

My only fish story is: I was on a family vacation up in Michigan trolling the lake, not a Great Lake but an awesome area I can’t remember the name of. But any way I was told there were some big linkers in that lake and I wanted one. Something hit my line, I had a couple of poles like yours that had 30 lb Tess, when it hit it stopped the boat and broke off the line. It all happened in a couple of seconds. We ended up catching some 3 and 4 lb small mouth bass. That was it… thanks you guys never disappoint…
Here in Spain our Catfish grow to 200 lb, a different species, but they are hugely effected by the moon cycle, try fishing during the full moon we have had incredible results during these nights, good luck.
Blackened is flat grilled seared with twice the seasonings and not buttered. A light avocado oil with a crust slightly sticking to the flat grill. Fillets that thick...yes in the oven 425/10 minutes/then you can baste with butter and garlic when done. No lemon. I know you are a good resident fisherman of a lake in your area...come and try Tuna fishing in San Diego, you thought a 32 lb catfish in a 8 min battle wore you out, try a common 60 to 80 lb Tuna we are catching here, with the 100 to 160 lbs in the mix. Saltwater fishing...Ocean Monsters, completely different game. Nice Catch though love your Vids.

That fish was 100% done. Being so thick catfish holds water. Most people in Louisiana cut it thin and fry it. It's good blackened also.

In Harrisburg, PA in the Susquehanna River, catfish love hotdogs (beef, not chicken).

Best thing to do with cat fish is let it sit in pickle juice for an hour in the fridge, helps with the flavor
