I'm trying to squeeze the nuts onto the wheels at 6:15 but they don't seem to grip at all. When I try to hammer them on they just come off :/ Dunno if I'm doing something wrong or if they're defective

tap them on, if they come off maybe you can tap harder, if still not going on, then defective.
