    Fried Red Snappers
    INGREDIENTS:
    FISH AND SEASONING:
    2 medium fish scaled
    3 limes, halved
    3 tbsp. lemon juice
    1 tsp. onion powder
    1 tsp. Of ginger powder
    1 tsp. garlic powder
    1 tsp. Maggi Chicken Bouillon (optional)
    2 tbsp. seasoning base/ epis/ sofrito
    ½ tsp. sea salt
    1 tsp. Lawry’s seasoning
    ½ tsp. “Sunshine by Tabitha Brown” All Purpose Seasoning
    ½ tsp. “Like Sweet Like Smoky by Tabitha Brown” All Purpose
    Seasoning
    ½ tsp. dry thyme
    ½ tsp. habanero sauce
    3 cups vegetable oil
    ½ cup flour
    1 green onion, chopped (garnish; optional)
    SAUCE:
    2 tbsp. extra-virgin olive oil
    2 tbsp. fish sauce
    2 tbsp. cooking red wine
    ½ whole green bell pepper, Julienne cut
    ½ whole red bell pepper, Julienne cut
    1 medium yellow onion, Julienne cut
    Tools Needed:
    - Frying Pan
    - Spatula
    - Ceramic Tray
    - Heavy-Duty Paper Towels
    DIRECTIONS:
    1. Descale fish. Then, marinate it in lemon and lime juice for
    15-20 minutes. Rinse them with cold water.
    2. In a small bowl add sofrito/epis, habanero sauce, and all
    dry seasoning. Mix well.
    3. Bathe fish in the seasoning mixture. Then, cover them with
    plastic wrap and refrigerate for 4 hours to overnight.
    4. Turn on the stove to medium heat. Place the frying pan
    onto the stove. Then, pour vegetable oil into the pan.
    5. Use paper towels to soak up excess juice from the fish.
    Sprinkle flour over them.
    6. Once oil is hot, add both fish to the pan. Flip fish after each
    side is thoroughly fried, 3-4 minutes per side. Transfer fried
    fish to a tray.
    7. Mix peppers, onion, fish sauce, red cooking wine, and oil
    together. Microwave for 2 minutes. Pour mixture over the
    fish, and garnish with green onions.
