We will make it with phyllo dough but you can make it also with puff pastry or actually prepped dough. If you would like to see the other versions, please let me know and I will be more than happy to make a video for you.
Spinach & Kale Roasted Spanakopita
For: 6 Guests
👉 Ingredients:

Filo dough 320 gr
Spinach 500 gr
Feta 150 gr
Olive oil 40 gr
Salt, Black pepper To taste
Kale 300 gr
Vegetable oil 20 ml
Walnuts 100 gr
Parsley 15 gr
Garlic 6 gr
Honey 10 gr
Sesame seeds 4 gr
Onion 180 gr
Egg 1 pc
➡️ Method of Cooking:
✅ For the Filling
Clean and cut the spinach roughly. Clean the kale and take the stems off before cutting it. Mix the greens. Slice the white onion and chop the garlic. Crush the walnuts if they are whole and not already broken. Heat a big pot on the stove to 8/9 electric stove power. Add some vegetable oil and then the greens. Season with salt, black pepper, and close with a lid.
Let them steam for 15 seconds before shaking and stirring the greens. When you have a good green colour with some chard roasting marks, take the greens to a tray or bowl. Repeat with all the greens.
In the pan roast first the walnuts and then the onion and the garlic until golden. Then add them with the greens. Crumble the feta when everything is chilled to room temperature. Add one egg and taste for salt and black pepper.
✅ Assembling
Place two sheets of phyllo on a tray or surface that you would like to work on. Brush the first sheet with oil. Add another sheet on top of the one that you brushed. Flip all three sheets and place the filling at the edge of the stack of sheets. Roll tight.
Before finishing the roll, brush some oil on the other edge so the sheets will stick. Then brush the outside sheet from all sides. Place on a baking tray and when everything is ready, sprinkle with sesame seeds.
✅ Baking & Serving
Using a knife or a dough cutter cut the rolls into portions. Bake in a pre-heated oven to 190c or 380f for about 8-10 minutes. Up until the rolls are golden and crunchy. When baked drizzle with olive oil and honey.
