I completely agree with the saturation of the cafe market in cbd. The trend I'm seeing in melbourne is less brunch cafes and more asian dessert/bakery cafes. However with these trends tend to be less coffee focused, more focused elsewhere to invite customers. To me, Melbourne being a food and beverage culture icon. It's hard to see that trends will be reasons to open and close. Constant shift will hopefully improve the culture, but not just because of tides.
People are going to get cabin fever and go looking for coffee outside.
