Amish Sugar Cream Pie

- Ingredients
3⁄4 cup sugar
1⁄4 cup cornstarch
1⁄4 teaspoon salt
2 1⁄2 cups half-and-half or 2 1⁄2 cups light cream
or (double cream UK)
1⁄2 cup butter
1⁄4 cup packed brown sugar
1 teaspoon vanilla
1 9-inch baked pie crust
ground cinnamon
Method
In a medium saucepan, stir together the sugar, cornstarch and salt.
Whisk in the half-and-half or light cream and cook and stir over medium heat until the mixture is thickened and bubbly.
Remove from heat.
Stir in butter, brown sugar and vanilla until butter melts.
Pour into baked pie shell and sprinkle lightly with cinnamon.
Bake the pie in a 325° oven for 30 minutes- the center of the pie will not be set.
Cool the pie on a wire rack for 1 hour.
Chill for 3 to 6 hours before serving- pie will set up upon chilling.
Cover for longer storage.

Nice job on the Sugar Cream Pie. Sugar Cream Pie is the state pie of Indiana. When I make mine, I do not use brown sugar and only nutmeg goes on the top. I also cook mine any more in the microwave, then when thickened in the baked pie shell it goes and then into the hot oven to bake for a bit. Butter is added and vanilla after it is microwaved. Flour instead of corn starch can be used, using the proper amount. I am 82 years old and am enjoying your videos. Sue in Central Indiana

Hey Dave, try it with Cardamom instead of Cinnamon. What a super taste sensation.
my did not turn out all that well, however I had a blast making with my son. Thanks you for that.
Use heavy whipping cream NOT half and half. Make sure the mixture gets heated well and all sugar is dissolved (he did not heat and thicken it enough at all, thats why he had lumps of brown sugar) when mixture has been brought to a boil then to a simmer to thicken..THEN add butter and vanilla. Make sure butter completely dissolves and is well blended into mixture. You need to prebake the pie shell in the oven a little first, then when cool, pour mixture into shell and bake. :-)
No cinnamon on mine, just nutmeg please. I am still baking.
