▣ Ingredients:
Cookie 90g
Unsalted butter 30g
Cream cheese 150g
Granulated sugar 50g
Lemon juice 15g
Egg 1
Cake flour 7g
Heacy cream 100g
Cream cheese 50g
White chocolate 30g
Gelatin 2g
Lemon peel 1g
Heacy cream 100g
▣ Baking:
160°C/320°F 35min
▣ Mold size:
18×8×5cm
▣ Method:
1.First make cookie base, add melted butter to the cookie crumbs, pour it into the mold and compact it, refrigerate it and set aside, if there is no bottom mold, you need to wrap a layer of tin foil at the bottom.
2. Make the grilled cheese, soften the cream cheese with sugar and stir well, then add lemon juice, an egg of about 55g, mix well.
3. Sift the cake flour in advance and add it to the cheese batter, then add the heavy cream and mix well, pour it into step 1 and bake.
4. Melt the cream cheese and white chocolate over hot water, add the softened gelatin and stir well, remove the hot water and rub some lemon zest into the mixture.
5. Whip the heavy cream, mix with step 4, pour into a laminating bag, squeeze on the cooled cheesecake, smooth out, and continue to refrigerate.
6. Take out the chilled cheesecake, unmold and sprinkle with powdered sugar, cut into pieces and serve.
