- I’ve never met a roasted chicken I didn’t like. They’re a classic, reliable standby that truly never disappoints, but they usually don’t really excite, either. They almost always elicit a “this is really good,” or “this is exactly what I needed,” and very rarely a “holy shit, this is maybe the best thing I’ve ever eaten.” Enter: this chicken. It’s deeply golden, perfectly juicy, and the leeks that roast with it will be the crispiest, schmaltziest, silkiest leeks you’ve ever tasted. Who knew leeks could be the star of the show? Not me!
My favorite thing about this recipe is that it’s truly a full meal- a real “spring chicken dinner,” if you will. There’s a punchy, bright leek salsa verde, a creamy, garlicky aioli, and all the springy vegetables you can find (think radishes, blanched asparagus, tiny potatoes). It’s my dream spring dinner, and probably yours too.

Alison's channel is one of the many new channels that filled the hole in my heart that Bon Appetit left after it fell apart. Just people cooking great recipes in their home & talking passionately about food all while just being themselves. I'd watch videos like this over any cable cooking show. Moving out of my parents' house soon and can't wait to make some of these recipes.

I’m glad Alison addressed the gargantuan size of those leeks within the first few minutes.
That was hilarious! Here in Portland we get these giant bananas in our local grocery that completely elude me but they are organic.....like Alison pointed out about the leeks.

Loved this recipe when you sent it out in the news letter! I used the left over chicken and aioli to make super delicious chicken salad sandwiches for lunch the next day. Definitely one I'll be coming back to!
