I tried these today. I don't ever make anything that requires kneading, so this was a little intimidating. I give this 4 stars out of five just because I didn't know the temp or the time to finish cooking these. My first batch was a little doughy. I'm gonna try these again! Thanks.
They look good! But these are called SOPES or PELLIZCADAS which means “pinched” because of how you give them it’s characteristic shape. MEMELAS are more of an oval shape, also a bit thick, with the beans inside, and fried with lard. Memelas are topped up with red, green or both salsas, queso and chopped onion. I used to have them in the street. They are delicious! 🙏🏼

I know that sopes are fried. I guess there are many versions!

We used to call these chilacas. Only difference is that we would fry them on the second cook.
I think those are also called sopas!
