Best Squash and Zucchini Dish Ever! | Low Carb Recipe

- Nothing like have fresh squash and zucchini right out of the garden for a great squash and zucchini casserole! This low carb / keto gratin is like a casserole, but just a weird saying. This dish is easy to make and everyone will love it!

Ingredients:
1-2 Yellow Squash
1-2 Zucchini
Chopped onions (however much you want)
1/2 block of cream cheese
1/4 cup parmesan cheese
3/4 cup heavy whipping cream
2 tablespoons butter
Dash of garlic powder
Salt and pepper to taste
If you mix and it's loose, add more parm.
Want some heat, add pepper jack or pickled jalapenos to the sauce.

I made this for Easter dinner with my extended family and some church friends. It was a huge hit!! This is now our new favorite Squash recipe. Even just the sauce alone is great to eat and dip things in. I used some of the left over sauce to dip my chicken in at a different meal. (Instead of garlic powder I use crushed garlic, because that is what I had on hand)

That looks awesome Hussey, I made one very similar to that except my Sauce was one cup shredded cheddar cheese, one half cup of Parmesan Cheese and one half cup sour cream and basically it was made like yours! God Bless!

Great idea! I put it in individual serving sized ramekins and they are in the oven now, 25 minutes to glory.
Made this tonight. Delicious!! Added a little nutmeg to the sauce and topped with some extra grated parmesan.

ok - made the Gratian......loved it! My dish was ceramic....maybe not the same as the cast iron - size wise.....wouldn't take all the sauce - but nice to have a little extra to put on when served. AND - the music trac - is GREAT! Definitely my kinda music!!!!
I tired this but only made one change which was adding to the sauce a half pack of Rach Seasoning which was pretty awesome! Thanks for the post man!

Dude, I just made this for my family and it was killer! Bad news, I might have put a little too much sauce in the dish and it spilled over a bit in the oven. I told my wife it ain't gonna be any good if it doesn't spill over a little bit here and there per The Hungry Hussey.

Made this yesterday and everyone loved it. Last night my granddaughter got the last little bit and she got up to get something to drink and the other granddaughter grabbed her bowl started to eat. They started to fuss and I’m thinking do I really have 2 teenagers fighting over squash.
