I'm 60 an I've seen old guys grab the top lip pull back skin head and all. The eat the cheek meat an all. Good luck on your next trip. I filet the same way you do. Been doing it 50 years that way.
Fillet it! we used skin them in the old days but we got over it, all country people used to do it that way cause they were afraid of wasting cause they grew up in the depression and it just got passed on. The thinner you make the fillets the crispier they are and better

New way for me, the old timers around here would cook them whole also with the bone in. It gives them a different flavor.❤ 👍
