My grandmother over 50 years ago was one that blew her pressure canner up. She got distracted talking on the corded phone to her sister in another room. I doubt her canner had that neat relief valve. She cleaned green beans off her ceiling for a while! I appreciate all the safety features that our canners have now! Your pork looks delicious and would be perfect for some enchiladas. Thank you! I canned my first pork the other day. My hubby thought I lost my mind!! But had a change of heart when he had pork nachos for dinner last night! He. Said this is really good! Lol guess I'm not so crazy after all!! 😂
I have canned Mississippi Pot Roast and Ugly Chicken(Thanks Leisa from Sutton Daze), but have never canned just pork or beef. I plan on canning both in the near future. I am so happy for Canuary! I want to thank you all for what y'all share and teach us. GOD BLESS Y'ALL!

I always partially cook meats before canning them. 1. So I can add flavored broth 2. So I don't have all the cooked blood and protein floating around. It's extremely unappetizing. 3. By precooking most of the fat renders off.

I appreciate you stating lbs. pressure in relation to elevation. When I hear 10 psi it boggles my mind as my elevation is higher than 1000 ft.🤩 Also having to add time to WB batches due to elevation. Thanks again!

Just bought 2 pork butts on sale yesterday. This is tomorrows project! There are so many ways to used canned pork! We often put Italian seasoning on it in the oven then add fresh parmesan cheese on top just to melt. It is so good! Thanks for sharing this!

Yum! The only thing I can add is that I never leave an open space when I’m canning. I’d of tossed in some beans on the top so the pork wouldn’t be so lonely plus it will help keep them from falling over. Looks delicious 😋

This past fall I canned 20 pounds of pork in half pint jars. Its so nice to have this on my shelf for a very quick meal.

Just canned pork last weekend and beef two weeks ago. Love having meats that are not dependent on the freezer.
I love having pints of pork on hand for pulled pork sandwiches or carnitas or burritos. So nice on a busy day.
