Love watching vintage Mikey videos!!! He is such a freaking professional now, I've learned so much about International traveling, to what to eat in a million countries!! From boston chowder to Seattle catfish lol and every asian food court inbetween!! My oldest daughter is in grad school in LA. And thanks to Mike's videos I've been able to tell her where to go to get REAL CHINESE food!! Since im way back here in Indiana and i cannot cook for her, she can at least get yummy foods based on Mike's videos, i do ship her care packages with easy to make stuff from my local Asian grocery store, but home cooking cant be shipped!! I actually love Spam, egg+fired, but I've never tried it in hotpot...my friends don't like Spam though so it's going to be difficult to try and put that in.

if you want noodles do it at the end else it soaks up awesomeness

Try hot pot at baba sushi and Sturbridge Mass!!!! It’s to die for , you’re going to really enjoy the presentation and hospitality, their food is amazing, they have oyster shooters they serve with raw quail egg and cucumber saki and of course a raw oyster
I was skeptical about the hb egg tasting better than it being raw in the sauce but it looks good mashed up in the bowl. Will definitely try that next time. Gotta try this place in the city too! They seem to have more of a selection of ingredients at this place.
This place is the best on in manhattan and has the spiciest soup base of any hotpot places in the US.The best on in NYC tho is in flushing, but they dont have icee

Forget rice and eggs. At the end of the hotpot add some fresh hand pulled noodles in to the soup then add hot oil, sesame sauce and vinegar = perfect.

LOVE LOVE HOTPOT. ESPECIALLY SICHUAN HOTPOT.
i like my seasoning sauce with garlic, sesame/peanut sauce, chili oil, and most importantly, sesame oil!!!! but on the contrary i always do add my veggies in the beginning because i want it to soak up all the soup and be super tender. especially vegetables like chinese cabbage.
if you ate with me I will give you the look of death if you put veggies in the spicy side :-)

where my parents came from in China they have hot pot in the winter, everyone have a small basket you put the food in the basket than you put it in the broth,no one put their chopsticks in the soup,you spoon the broth into you own bowl, hay if he likes hot oil in everything so what? you can used any kind of soup stock for the hot pot, usually we have two different kinds,one fish stock for sea food,one chicken or meat stock for the meat. you can just add water in the pot, with all the food you put in you'll end up with a very rich broth.
best hotpot Ive had was in Guilin...the hot side was amazing. Cooked lamb, beef, tofu, veggies, etc. I couldnt stop eating

You should eat spongy tofu last with your veggies for the same reason -- i.e., it soaks up oils and seasonings diluting your hotpot flavor for meats!

I've a question, is the spicy hotpot Mala? Because you can actually request for extra mala blocks(im not sure what theyre called it just look like dried chillies squished into a block" at my restaurant
Instead of hard boiling the egg, try cracking it right into the hotpot. I usually add a couple to my ramen at home.
The one I had was at more of a restaurant, not a buffet. It was my first time doing it haha so I did not dip it (nor had the option to make my own) and dumped things in like bit by bit (bit of chicken, bit of bean sprouts, bit of dakion...etc) Served for more of a individual meal but I am sure if enough people order there would be a bigger choice. Pretty good will go again and try another variation (first go was chicken with a korean spicy broth, YUM)

You seem to have a passion for it and there certainly isnt too many traditional Chinese recipes that havent been jaded out there...
You could give the history and location of the recipe and have everything from family stuff to regional cuisine.
Just a thought, but please give it some consideration.
