I made this tonight and oh gosh, it was delicious. Made it with roasted potatoes and asparagus. yummy. And, yes, it certainly was pricey but worth the sacrifice. I didn’t make the horseradish sauce because i was exhausted from multitasking (meal prepping) but will do it another day to use the the left overs
Yumm - Now I have a tip for you & all of your viewers. To avoid the loss of juice, pooling under the meat, "always" let the meat rest on a rack, just like you do with baked goods. This way the juice stays in the meat. I learned this tip from Reverse Searing Steaks. It works brilliantly. Even for fowl meats.

Hi Lisa, it looks so delicious! But I do have a question about the garlic. When you mince the garlic, you cut the pieces off and then put in the next garlic clove. But wouldn't it be easier to just put in the next clove and cut it off when you put in the last garlic clove? Or does it have a reason you cut each clove? I'm just curious!

This is fabulous so far- but I took the temperature at 25 min and it was only at 107. Maybe I didn’t let it get to room temperature as it was only out an hour and still cool when searing. Would this make a difference on how long it would take to reach 130 in the oven? I would like medium temperature. Thanks!
Wife and I shared the 20oz. ribeye at Longhorn steakhouse yesterday evening cooked to medium rare, and it was excellent 👍👌👌👌 And we had great service as well. The sides were fresh and tasty.
