- Whether potatoes are mashed, fried or in a casserole, au gratin potatoes are at the top of the potato chain. When I’m looking for a side dish for special occasions Potatoes Au gratin are my go to, because everybody loves them and they never let me down. I love including a combination of sweet potatoes with gold potatoes because of the touch of sweetness the sweet potatoes bring to the dish, then combined with the creamy cheesy sauce for the perfect side dish. You can choose your favorite kind of cheese for the sauce, as long as its a good melting cheese, just like you can pick the proportion of sweet potatoes to gold potatoes according to your taste. 4 1/2 lbs. potatoes (combination sweet potatoes and gold potatoes)
1 C. Freshly grated Sharp white cheddar cheese
1 C. Freshly grated Gruyère cheese plus extra for topping (your choice of cheese)
1/3 C. Finely chopped onions
2 medium garlic cloves (finely minced)
5 Tbsp Butter
4 Tbsp All purpose flour
1/8 tsp ground nutmeg
1 tsp salt or as needed
Pepper as needed
2 1/2 C. Whole milk
Non stick spray or butter

Rachel, first of all thank you for sharing all your wonderful recipes. Your step by step explanations are awesome. I learned alot about cooking from my mom many years ago. Her kitchen was her happy place as well. A hugh failure for me early in my cooking years was making gravy, it was aweful. At home my mom made the gravy, I mashed the potatoes.A visit home we switch duties. I made much better gravy after that. Wishing you and your Ron a Merry Christmas.

I absolutely love the way you positioned the potatoes on the vertical. It’s beautiful and I believe it absorbs more of the cheese sauce. What a great idea to mix sweet potatoes with yellow potatoes. Hi Rachel, I do not have a Mandolin, could I slice the potatoes as thin as possible, will they cook in the ove? I think they’ll take a long time. Would it be better if I half or three- quarter cook them first? Then stack them up in my serving dish? Thanks I am thinking of doing this for the coming Easter Sunday family lunch.
