    You guys are so much fun to watch!! … quick note to new canners - the Ball & NCHFP @ UGA’s instructions is to VENT the strong steam for 10 minutes BEFORE putting the regulator on the vent pipe - and then that’s when the pressure should start to rise. I’m sure you guys do that - not every video is meant to be a super precise “how to” - Just want to make sure everyone especially newbies have safe food 🤗

    I literally couldn't have found this video at a better time! I have jars sterilized, lemon juice added and filled with pizza sauce and bloody mary mix. The recently happened ex wife was always the one to do the canning. I was the gardener and helped with canning prep. She always did water bath canning but I bought your exact pressure canner on sale and never used it because she wanted to do what she knew. I am literally waiting 9 more minutes for my 15 minute mark at 10lbs of pressure. I had to rewatch the video because the kids jumping in because my focus switched to them. They are adorable and made the video just land over the top for me. My 2 littles are sleeping but they helped process everything earlier. Long day tomorrow, I mean today, but well worth the effort! I had a really good idea of what I was doing acidity levels and all. Just second guessing if I was doing it right with the, new to me, canning method. Thanks for easing a little bit of my anxiety while pressure canning for my first time! You all have a beautiful family and a sincere thank you!

    I was laughing so much! I am thankful that I am not the only person who used the jar grabbers backwards. I could never use a pressure canner in YOUR kitchen...reason being, I would be more nervous than a cat in a roomful of rocking chairs! 🍅🐾🌱👍🏻

    Happy late Birthday! I'm currently freezing my tomatoes as they come in but plan on having a canning day Sunday. I water bath can since I don't have a pressure cooker.

    "We smile, we laugh, we love." BOOM! ROTFL. Thank you, I needed that laughter this day. Good to can tour own stuff because no preservatives and if someone doesn't like onion or garlic or peppers, none of that needs to go in. It's the closest thing to fresh and practically ready to eat. Much love to you all.

    Happy Birthday you young thing. lol My birthday was on July 1, I turned 64. Many more years. I truly do love your family, it is special, you have a lot of love. So happy for you.
    I have a question. I have been canning for about 54 years, and I have never put lemon juice in my tomato sauce. I never needed to because it is so high in acid. Your explanation as to why you do didn't make sense to me. Can you explain it once again, please?

    This year I found the easiest way to make my tomato sauce. I used my vitamix, and cored the big ones. Quartered the big ones threw the others in the vitamix and turned it on. Used all my colors of my tomatoes. It grinds up the skins and the seeds. Then I put the container full in a pot to boil. Then in the jars. Don't have to skin or strain. Wow so much easier. You also get all the nutrients from the whole tomato.

    Get yourself a Cuisinart Smart Stick and it will grind the skin and made your sauce thick and you then only have to strain the seeds..you get all the good in your sauce....

    Just a tip .. Don't tilt your jars as you take them out of the canner. You could break the seal.

    Mean I'm so relieved I got tomatoes to make pizza sauces and for soups but I started 4 different types. None of which are paste tomatoes. I don't know why but I thought I consult do it because I got the wrong ones

    I would like to see the consistency of your sauce. Is it smooth? When I canned mine, the sauce looked like it teeny tomato pieces, not smooth or thick even though I strained them. Just wondering what I may have missed. Thank you!

    I thought you only were supposed to add lemon juice if you are water bath canning., not pressure canning. I never add it if I am pressure canning tomatoes

    If you remove the pressure yourself you’ll also ruin all your hard work as the liquids will come out of the jars.

      Contre Viole 32 yes, but if you remove the weight after canning before it naturally depressurized you’ll cause siphoning and lose your food. And my canner instructions say to vent for 10 minutes, not five. So everyone should check the manual of their own canner.

    Do you not let it vent for 10 minutes first? I always hear that you’re supposed to do that before you put the weight on. Good video thanks for sharing. Jenn sounds like you still have a little bit of a cold left hope you get to feeling 100% soon.

      My Presto canner you do vent for 10 minutes before placing the weight on the unit. I certainly can’t tell what brand the folks have. Perhaps the directions are different?🦋💜

      Guys...you have to remove the weights, turn your stove and wait until the steam vents from that spout steady...time it for 10 minutes THEN add your weights and wait until it starts rocking then start timing the process. I've canned for 30 yrs...that is an important step. Have fun guys.

    I think u need to read your directions again. U had way to much water in it. OR it looked like it. U should only have a few inches in the pot. Oh and u don’t have to sterilize your jars if your pressure canning. I throw in onions zucchini carrots garlic when I cook down my tomatoes. Makes wonderful tomato sauce. We can most everything we eat. U also need to vent for 10 min. before u bring it to pressure .

    Great video!! Did you know you can water bath can in your pressure canner. Just read the manual to find out how. It looks like you have the same one I have, so you just need to pull the little black plug out of the lid for water bath canning and put it back in for pressure canning.

    Your Ball book should say that sterilizing your jars before packing is not necessary if your processing time in the pressure canner is 10 or more minutes. That alone sterilizes your jars. If you run your cooked tomatoes in the blender for a few seonds it will all pour right through your wire strainer leaving only seeds and skin behind. Only fill the blender half full of hot tomatoes at a time.

    Your suppose to vent it for 10 minutes before you put the weight on to vent the air out of the canner.

    Happy late birthday Zach! Canning has always intimidated me for a couple reasons--it seems complicated and I didn't want to do it the wrong way. But I've got a list of stuff that I want to can this year and I'm determined to do it :)

      You got this! After you do it a few times the fear will ease. Jenn and I still talk about it after 5 years of doing it how we still respect the pressure canner. With respect comes caution and safety.

    You can use your pressure canner as a waterbath canner as well. Just don't seal the lid. I do it all the time. Just fill your canner so the water is over the lids by 1 inch and your good. Just a thought

    Happy Birthday. Love your channel and videos. You can use your pressure canner as a water bath canner. You just need a regular pot lid that fits your canner. Use the rack to put your jars on and add the amount of water needed and put the pot lid on it and process away. Mrs Volfie on Our half acre homestead does it all the time. Check out her youtube channel to see how she does it. Hope this helps you somewhat. Also I quater my tomatoes and then blend them in the blender and then put the through a funnel that comes with a wooden thing and roll it around the inside and push all the juice and pulp through the holes in the funnel. Easy and then I fill the jars. The one I have it my Grandmothers and I think they call them a type of juicer. The funnel fits in a holder and the wooden think rolls around the sides and all you are left with is tomato juice. Then the cooking takes place when they are processed. Sorry about the length of this post. ust telling you how I do it.

    If you core the tomatoes and score the bottom then freeze them the skins will come right off when you thaw them. You also will save a lot of time spent cooking them down.

    Love you guys and btw, I’m from NC and I say “bul” for “boil”...my adult kids STILL lol when I have to intentionally say “boil” and “oil”(which I pronounce “ul” lol) It’s a southern thang 🤷‍♀️
    Thanks for this video and I got over my fear of the pressure canner also...I was always scared of my mom’s pressure cooker back in the day lol
    But I’ve learned so much from y’all, other YT videos and the instruction book of course lol

    Our son bought us a NorPro sauce maker. Hand operated. Used it this morning and OMGoodness...I thought it was "another" gadget to collect dust. This gadget is AMAZING!! Sauces and strains all at once. We ran the pulp and seeds through 3 extra times and it made such a thick velvety sauce. I'm going to dehydrate the peels for tomato powder. 7 quarts in the canne r now, 13-15 pints to go. On the stove in less than an hour which included a last minute run through the tomato bed. Just an FYI to our beloved Stiver family. This thing will make your tomato sauce and any other sauce project so much easier. So happy I opened that box after a year on the shelf.     No worries Zach, I find it fascinating how different minds think? we all learn every day! HAPPY BIRTH DAY, dream big and believe they will all come to you! First experience with a pressure pot,, I had no idea it was a pressure pot, and thought it was just using big pot.. when I went to remove the cover it wouldn't come off. I thought I was being wimpy. so I put more effort into it.. I couldn't understand why the cover would come off.. LOL Well, I put my back into it, and it POPPED Off, sounded like and explosion, cover smacked me in the face and squash went everywhere.. Husband was fast and smart enough to bring me right to cold shower. LOL I was clueless.. NOT ANYMORE well not about pressure cookers LOL

    Thought we were the only ones that like different flavors of chili!! We don't vary too much but would love to see your different recipes (new to the channel). Trying a new process this year, cooking small batches of tomatoes in the crock pot then using an stick blender to make sauce and freezing it until the temps drop then will process a big batch. When people question canning, my response is "I control what goes in the jar." Hope you had a Happy Birthday Zach!!

    According to the National Center for Home Food Preservation (page 1-14), it is only necessary to pre-sterilize jars if they will process in the canning process for 10 minutes or less. This would save you some time and effort. Another canner commented below, and she is correct, that it is no longer a good idea to boil your lids. This changed when Ball changed the orangey seal material from rubber to a form of plastic a few years ago.

    Plus canning your own stuff when you make the labels for them you don't have to add the words that you cannot pronounce that are on cans short-term name preservatives. Yuck. No yuck if you do it yourself😄

    Great video.. thank you for sharing...Please do your home work on pressure canning your suppose to let it vent for 10 min a hard steam to get the cold spots out of your canner before putting your weight on. The kneady homesteader or Suttondays or Linda's pantry, good videos to watch. I hope you had a wonderful birthday.

    it feels so good that your kitchen looks like my kitchen, build twobuhfour counters and plank shelves. We salvaged, cleaned and re-stained our shelf wood from the old demo we've done around the house. When we started, we were just being frugal but with the cost of wood these days, I'm glad we've put it up for this long and can dip in when we need it.

    I thought you fill to 1" head space. it looks like you have more than a 1" space. you are suppose to let it vent 10 minutes Before you put on the weight. Unless you are in a Hurry ! LOL

    I am using an electric pressure canner and it is even nicer to use since it counts down and wont go over pressure. Beyond that it wont let you take off the lid until the pressure is gone and it is time to remove the lid. I found even though I cant use quart jars I still am fine and it takes less time. I am canning cold foods so I dont need hot water in the bottom of the canner, so you can let every thing cool and cold pack into the jars. We are canning so we can buy #10 cans or dry beans and can them in a size that is just whaat we need for 2 people and then we dont have to store larger quantities in the fridge. It is working very well and I dont have jars that aren’t sealed.

    Yous need an electric kettle to boil your water quicker. They take like 2-3 minutes, there an essential kitchen iteam here in the UK. I couldn't live without mine haha

    My first year of having a magnet wand to get the lids out of the hot water. Over 40 years of canning why didn't I find this before. Saw it on another utube channel.

    I got tired of canning multiple sauces, I made waayyy to much pizza sauce, so I went to just doing tomato sauce then I can add the necessary spices at the time I cook it. So much easier! Great tips thank you and God bless y'all.

    Canning is a LARGE part of homesteading, if a homesteader is not canning then its NOT homesteading. Canning is a huge part of homesteading history that's fading away with these newer generations. That's why I really enjoy watching y'all, y'all show what homesteading is about, preserving foods. Keep up the great work.

    I know a lady that she had a pressure cooker like yours and hers actually blew up throwing tomatoes all over her kitchen including the ceiling too. Homed canned tomatoes are so good.

    I love how smiley you both are, and how you love all that you are doing. That’s why I enjoy your videos.
    Just fyi, my pressure canner manual gives instructions on how to use it as a water bath canner too. Maybe yours could too. Also, my Ball book says you really only need to sterilize your jars for anything processed less than 10 minutes, and the new Ball guidelines say your lids and bands no longer need to be sterilized or even heated! That might save you a tiny bit of time. You are so busy!

    I love seeing my canning shelves full! I started canning and gardening last year and I love having that extra food that won't go bad if the power goes out! I'm still learning, so I need all the canning videos you can do! 😂😂😂
