  • Finally I can show you how to prepare Nocino, a homemade liqueur with green walnuts 😱, we will follow Tony's recipe 😎 who wrote me the recipe directly from Austria.
    For this this homemade liqueur we will need:
    Green walnuts. 16
    Alcohol 96° 1000 ml
    Cloves 16
    Coffee beans 16
    Cinnamon 1 pinch
    Zest of 1 lemon
    Sugar 500 g
    Water 500 ml
    If you want to make also the Nocino Wine 😉

    I love your recipes. I am particularly fond of the liqueur recipes. I never thought that I would learn how to make pistachio liqueur and the others as well. I thank you so much for your genuine love of the flavors and food of your country. Please keep it coming as it is so welcomed!

    My mom used to make this when I was younger. I believe she used to keep the jar on the deck in the sun while it was extracting/brewing, but I may be mistaking it with another liqueur that she used to make. I also thought she kept the nuts whole, but this was over 30 years ago so I can't remember for certain. Thanks for sharing this simple recipe.

    I make a version with the black walnuts native to here in the NE US. It comes out very tasty, but it does require aging. When I make it in the summer it's ready at Christmas, but it's better the following Christmas.

    I have been making green walnut liqueur for several years now. The recipe is slightly different. Not only does it taste spectacular, but it is quite healthy to consume due to the amount of iodine that the walnut contains. It is especially good for the thyroid gland.

      Green walnut liqueur
      I live in Serbia and I usually start making liqueur at the beginning of June, from the 1st to the 10th. You can cut them, or you don't have to - Your choice.
      40 green walnuts
      1 L of homemade brandy (in my case, our homemade apple brandy - about 40% of alcohol)
      1 kg of sugar.
      Place in a jar, close and leave in the sun for 40 days. Stir occasionally to dissolve the sugar.
      After 40 days, strain and add spices: the peel of one orange (wash it with water; you can also use baking soda), 1 whole nutmeg (cut into 2 - 3 pieces), 1 cinnamon (only the peel), cloves (5) and vanilla sugar 30 gr (or half a stick, or vanilla extract 1 coffee spoon).
      Leave it all again in the sun for 20 days.
      Strain.
      Enjoy!
      P. S. I don't use cinnamon powder because it creates a thick mass that spreads around the jar, like jelly and looks very ugly! I only add cinnamon bark!!!

    Spectacular. I have a friend that produces walnuts and I can get them right now in this state here in Greece. Now I want to make some walnut bitters, same recipe without the sugar maybe. Seems really really great!! Thanks for sharing to both you and tony

    I've had the commercial brand of this type of liquor and it's bloody delicious you can really taste the walnut and it's the best thing to throw on some vanilla gelato. I want to make this now and all I have to do is plant a walnut and just wait...;)

    I've made it a few times and fully concur, at least 90% alcohol is necessary 😜😋

      The first nocino I made (last year), I used regular vodka, then according to Little Vienna blog's instructions, added dry brown sugar. It seems that high proof alcohol recipes call for simple syrup, and lower proof alcohol recipes call for sugar. Maybe I'm way off, though.

    My favourite part of making this is about 12 hours after you start, because just before it turns a dark green / black colour, for a few hours it’s the most alarming fluorescent colour I’ve christened suicide green - It looks like glow in the dark brake fluid and has a distinctly other worldly appearance!

    Glad you made this! My wife found a recipe and had to try making it... It's truly delicious and one of the most unique flavors out there. The liquor itself is nearly impossible to find commercially where I live but we have lots of walnut trees!
    Out recipe:
    Pick green walnuts, and quarter them. Pack in a jar with sugar (fill the gaps around the nuts with sugar) and let set for 3 days shaking regularly. After three days fill container with strong neutral spirit (should be about the same volume as the liquid released by the nuts). Add spices of desired. We used black peppercorn. Age for about a month then strain and bottle.
    After bottling the character will change over time. Initially the sport will be dark green and have a spicy astringent flavor but over time it gets nuttier and almost fruity.

    Good! You can try gooseberry wine too using crude cane jaggery instead of sugar. It comes out nearly black or darkest shade of brown when completed. Some spices are used to enhance the taste.
    Gooseberry wine is used as traditional medicine to supplement iron and vitamin C. Just 30ml twice a day improves immunity against several viral infections. The taste is somewhat different from other wines, sourness balanced by sweetness with slight heat of alcohol and spices.

      Hi sir I have that jaggery sugar too,I have not used it but if I use it to make any type of wine with it how will it taste .I am new to making wine thanks.

      @@porkfied You can use jaggery instead of white refined sugar. It's healthier too as it has minerals and other nutrients compared to white sugar which contains none.
      The only difference you will find is the taste. Your wine will taste like a bit of molasses flavour which improves over time. Also it imparts some brown colour which is sometimes desirable. You can use it.

      As requested, the chutney recipe, i make no claim to originality, i got this elsewhere off the web on a site called the urban huntress, i have tested it and it's good, only seems to pair really well with cheese though,
      The leftover nocino walnuts (approx 3 cups)
      1 cup raisins
      1 Tbsp fresh ginger (shredded)
      10 peppercorns (in a cheesecloth bundle)
      2 tsp mustard seeds
      6 juniper berries
      2 shallots or 1 yellow onion
      1 & 1/3 cups brown sugar (or a blend of brown, coconut, palm, evaporated cane, etc.)
      2 apples coarsely chopped (about 2 cups). I used some foraged apples which were soft fleshed and sweet.
      1 & 1/2 - 2 cups of organic apple juice
      3 cups apple cider vinegar (enough to cover)
      Instructions
      Put the walnuts into a big pot. Remove the spices, but set aside the vanilla bean.
      Smash up the walnuts with a potato masher until they are of a consistency that you find appealing for chutney. I like it a fairly chunky.
      Add the vanilla back in and all other ingredients.
      Bring to a boil and simmer for 2.5 - 3 hours. Keep the lid on for the last hour.

    Hello I was on the syrup making stage of this recipe and thought I remembered the instructions correctly, but unfortunately I didn’t. I doubled the amount of water/liquor ratio so instead of 500ml water/1000ml liquor I did 2000ml water/1000ml liquor (for me I did use Everclear). It is so delicious, but weak. Do you have any tips to remedy my problem? Thank you!

    We only have access to everclear 151 which is 75.5% alcohol. can we follow the same directions or recipe needs to be tweaked a little (water measurements) ?

    Ciao! I need your advise. I have used a recipe without water. I have added 1 l of alco 96 and sugar (900 g) into 35 walnuts (900 g). How strong it will be? Does the level of alco goes down by itself or should I add some water?

      Deano, since you can't buy it retail, I would imagine you would have to know someone, or maybe know someone who knows someone who can supply it. Hypothetically speaking, of course, you could buy a cheap water distiller off ebay, for about $70, and make it yourself with a simple sugar wash, costing maybe $1.50 per litre, and a couple weeks of fermentation. But since that's illegal in Australia, you wouldn't do that, even though you can find videos on how to do it on youtube.

      My heart breaks for you Californiansimean Australians. How do you folks breathe over there under so much oppression? What is truly sad is that this is all natural. Even the alcohol. I'd bet money the leaders of Australia have access to 96% alcohol.
      So... if i were desperate, I'd add water to ethanol gasoline and siphon the water. It binds with the alcohol leaving the gas behind. I am not desperate though. In the 70's, people were drinking the gasoline because it was cheaper at the pump than at the liquor store. Some folks died. This post is for informational purposes only. Do not drink gasoline. You will die. The information is for oppressed people who may have a scientific need for grain alcohol. Although you can separate it from gasoline, you should not use it from gasoline to put it in your body. This is however, a good way to insure you get 100% gasoline for your small engine uses.

    Do you have to know ahead of time whether the tree produces sweet or bitter nuts, or can you use either?

      I don't think that walnut trees produce bitter and sweet nuts, only thing I can think of is almond in which case you'd want to be careful and definitely not use bitter almonds unless you know what you're doing.

      @@betsywoolbright8059 Around 8 raw bitter almonds are enough to be poisoned, that's why I think you should be careful because you can probably neutralize it but if you don't know what you're doing, could get bad.

      i am making a banana wine while watching this video,i dont have this nuts so i just made what is available,any way i use the method you use in making mango wine,just adding some grapes instead of yeast,as of now its a little bit sour so maybe after the fermentation i will add some sugar to sweeten the taste or any suggestions? thanks.

    We have this Finnish liquor called ”salmari” or ”salmiakkikossu”, you use 500ml of vodka and some Finnish salmiakki. Put the Salmiakki (did i mention it is a Finnish candy?) to the vodka-bottle and wait for 1 week! It’s very nice and gets you fucked like a sailorman 😂
