I have the 18. The 22 was never in the running for me because I don’t have a lot of storage space (WSM stays in my garage) and the 22 felt too bulky for me. More importantly, I know the 22 uses much more fuel and the 18 works just fine for a family of 3 or the small gatherings we sometimes have at our home. I’ve had it for over 2 years now and have smoked two racks of spare ribs at a time or more with my rack, briskets, and turkeys for Thanksgiving. I don’t regret my decision one bit.
That’s awesome Robin and I agree with ya 100%! I like my 18” way more than the 22” but I like grills and wanted them both lol. My next grill I think I’ll get is the 14” to complete the collection!

Owned all 3 for years, have fired up hundreds of burns, and imo for most situations the 14 is way too small and cranks out too much smoke for its tiny volume, the 22 is big time overkill and is a massive fuel hog, but the 18 is an engineering masterpiece for several reasons. So if I were to do it again and buy 3 smokers then I would go with 3 - 18s Just sayin 😁

I bought the 22 last month (my first smoker grill) and it definitely is a fuel hog. I tried using only half a bag of Kingsman charcoal in the ring for smoking a pulled pork and found out the hard way I needed to use more. Kinda wish I bought the 18 but I usually have a lot of family cookouts during the summer which is why I got the 22. I've been havin fun with it tho.
I have both WSM's. I keep the 22 at home in GA and the 18 at my parents' house in SC. I built a bigger charcoal basket ($30) for the 22 and I can rock that thing at 250-275 for damn near 30 hours now! They both cook great, but size does matter depending on your function. I can hang 24 slabs in that 22! They both do what they're built for. Good video!
With your mod for the basket, do you have pic and how you mod it. I need to get longer burns out of my 22 inch. Was considering getting GURU to help with times and temp reg.
@@ANTHONY-if8im it’s just 2 coal grates turned 90 degrees of each other so the holes are smaller. I do have the Cajun bandit ring for my 22” which is on there website. But to be honest the 22” just likes to eat coal lol
@@ia6980 heyo. So I cook on the 18 about 3 times a week. Cook for 5-7. Plenty of space. One thing I'm glad of, is the weight. I can lift it and move it. 22 might be a bit too much if you're moving it. Casters can be added but I go from concrete to dirt. Any other ?s?

I have both the 18 and the 22 and absolutely love both they are such wonderful cookers. But yes I use the 18 much more often and the 22 comes out if I'm cooking for a big party or if I want to lay ribs flat on the grates. The 18 handles most cooking situations and can accommodate enough food for 1-2 persons or gatherings up to 10 on average. IMHO the 18's stock door works fine it seals well after a few cooks. The Cajun bandit door or at least putting gasket tape on the stock door is a must-do for the 22 if you want to conserve and reuse unspent charcoal, or else all the charcoal will burn to ash completly before cooling down. Both allow for hanging racks from third party vendors which makes them ridiculously versatile if you want to do PBC style cooks as well. So I reccomended going with the 18 to start if you don't do lots of big parties that often, or you don't mind cutting your ribs to fit (save for hanging) the on the 18's grates. I admit the 22 is awesome in it's own right because it's a lot bigger when you see it in person vs. seeing photos of it. All WSMs are very user friendly, the food cooked on them taste so darn good, and very affordable if you can't afford the 1/4 in thick offsets. Highly, HIGHLY recommended. Cheers!
I have the 18 inch and it works great. But I find when I do ribs or brisket it’s really tight to fit the meat on the rack. I will be buying the 22 inch for that reason
I have the 22 inch, but my decision was made because I have a 22 inch kettle, and all my weber kettle grates will fit, my accessories work with it, made sense for me. I also recommend the ArborFab charcoal basket. USA made in Michigan.
New to smoking so I made a mini WSM, now I'm hooked! Was about to purchase a 22 but was up against the fence when in came to the 18. I mainly just cook for myself and sometimes for a hand full of other people. The 18 will most likely be my next purchase. Thanks for honest review and posting!
I started with 18wsm. Sold it and bought the 22. Really wish I would have stuck with the 18. Like you said the 18 runs all day without much effort. My 22 takes a good while to settle in.
Great vid, thanks. Good tip re: the charcoal grate. I've had an 18" WSM for almost 15 years and it...just...keeps...running! Capacity is a bit of an issue, but man is it fuel efficient and holds temps like a champ. I've had to replace the grates but otherwise it's held up, even here in south Louisiana where the heat/humidity is HARD on equipment. Agree that the lid hinge is a worthwhile accessory. Stainless grates would be another I'd recommend.
My first WSM was 18. It was great. I have a 22 now and also like it. The lighter weight of the 18” parts makes it easier to manage. The food capacity can be a bit of a drawback. I like that the 22” I can fit a lot of food onto a the single top grate. It definitely burns more fuel, but it also cooks more food using that fuel so it’s not an apples to apples comparison with the same amount of food in each. If the 18” is enough cooking space for you, it’s the better choice… but if you want the occasional big cook, the 22” is the way to go.
I bought the 18 a year ago, I didn't really need it - I literally have every size Weber kettle. But I took a flier and bought the 18 and love it. It is fun to cook on.
My 18 inch needs 2 bottom vents 95% closed to hold 250 F, so before i open the lid to check on the food, I close the 3rd vent and I find that it keeps the temps from spiking (the downside is you can forget to open the vent back up once you put the lid back on) Otherwise, the temps will spike, but even then, it's easy to bring them back down. Avoiding spikes is important, because if I have to choke the fire to bring the temps back down, the smoke gets dirty and the food can turn out bitter. If i ever have spikes, i prefer to add room temp water to the water pan over closing the vents too much.
Great comparison. I bought my 22 WSM used for $50 and put about $350 in mods into it. I've never wanted for a smaller one, use Weber kettles for smaller cooks. These are rib, brisket and pork butt machines! Nice job....

Great video! I have both the WSM 22 and WSM 18 and think they're great smokers! I agree with most of the comments here, but my experience has been that it's easier to manage heat on the 22 WSM. I live in So Cal with moderate temps so I'm guessing this is a factor, but when I fill the water bowl, use the minion method, and keep all vents completely open, the 22 settles into 275 degrees and stays that way throughout the cook. I've used it primarily for smoking turkey or ribs with great results (still haven't tried pork butt or brisket, but they're definitely on my list!). While I've had to work with the 18 WSM to manage heat, I still use it more often due to its size and fuel consumption. But both smokers have a place on my back patio.
I started with an 18", bought a 22", and found a brand new 14" at a sale for a nice discount recently but haven't used it yet. The 18" is a really nice size for pork butt and ribs. I generally use a rib rack and can easily fit 3 racks on the top grill with the Weber rib rack. It's a little crowded for a full packer brisket but you can make one fit. The 22" is huge and definitely uses more fuel but it'll fit even large briskets no problem. I'm planning to use the 14" to cook a pork butt here soon. I do recommend buying a 2nd charcoal grate for any WSM and turning it 90 degrees to the base charcoal grate. You end up with longer burn time. I ran my 22" (completely stock other than the 2nd grate) using a Thermoworks Signals and Billows fan set to 250 F and it was still ~220 F according to my Thermoworks Signals after 11 hours. I used about 15-16 lbs of Kingsford competition briquets on that cook. WSMs are awesome and you can turn out fantastic BBQ with honestly not a ton of effort. Once they're set up, they basically just sit there holding their temp.

The GF has the 18". What I learned is how much water in the pan changes (lowers) the temperature. It is not about moisture, it changes the heat. And it isn't constant as the water evaporates. But I like it. It just takes a moment to get used to it.
Heat is more stable and easier to manage on the 22', yet it consumes more fuel. For big pieces of pork, suck as brisket or pork butt, it's the way to go when you go smoking for more than 7 hours
I also have both smokers. I use the 22 primarily for hanging ribs. I can get 12 racks on it. This is my go to method for ribs. The 18 I find is not deep enough for this. Each smoker has its own purpose.
I didn't realize the 22" was so much bigger. I have the 22", went with the 22 because of the amount of food I'd be cooking. I use both racks when I'm making ribs. I normally do four to five racks of ribs and is one of my favorite things to make.
Everybody on the /r/smoking Reddit says to just go for the 22" because "you'll never regret having too much space". That's probably true, but it seems overkill given that I'll be smoking for 2 people 90% of the time, especially given that the fuel requirements are higher on the 22". I'm coming from electric as my first smoker, so I'm glad to hear that the 18" (that I just ordered!) is easy to keep the temperature steady since that was one of my big concerns. Ya I mean the 22” is cool and I’m happy I have it but I prefer using the 18”. The 18” WSM is prolly the best running grill I have. And thanks for the comment!
@@lorinchak7436 I'm pretty happy with the 18" still. I do have to slightly bow a full rack of ribs if it's big enough, but it's always shrunk enough after an hour or so that it lays flat. I still haven't tried a full brisket yet, which I think is the only thing I still have potential concerns with at this point. I think at worst I can get a hanging hook for a brisket or something to lay under the brisket to "arch" it to make it fit. Very happy with the 18" overall though!
Super happy with the 22. Yes, temps spike when you open it, but it's easy to fix. Just don't leave it open for too long. On the upside, huge space. Very comfortable to work with.
I've had (2) 18 WSM's for over a decade and find them to be quite perfect, I usually do two pork butts or ribs and occasionally a brisket. However, I just received a 14 WSM as a gift and it's absolutely PERFECT for doing two pork butts. I did my first cook last night and followed my usual method as with the 18 and it held through the night no problem. It's on hour 11 right now and it's chugging along just fine. I'll probably be using the 14 much more frequently than the 18 now as it uses far less fuel with the same results.
@@MadHorseBBQ I think you'll like it! I didn't have any issues with it putting out more smoke or running any hotter than the 18 WSM as someone commented. Smoke and heat are all about fuel and air - control those and it doesn't matter. I just looked up the price of the 14 and it's $279! Back in 2009 I paid $239 for the 18 WSM. Honestly, there's no way I would pay $279 for the 14 if I already had the 18. You can buy a LOT of charcoal for $279!
I know everybody is going to say get the 22.. I have had the 18in for 25 years and it is more than enough for cooking for a family.. It's nice having the extra space of the 22in but it is more expensive and uses more charcoal and how often are you going to cook for 10 or 20 people? If you guys are like me you probably have one or two Weber kettle is laying around you can cook extra food on if you have a party
Ya TBH the 18” is my easiest and best running charcoal grill I have. To me the 22” is more difficult to control as well. But you nailed it on every other point. I’m happy I have both and kinda want the 14” to complete the collection.
The 18 can fit a average size brisket? That’s my big issue with deciding right now, and store around me don’t carry the 22 so I don’t have a good side by side comparison
Will say it again...wsn 22 is bigger, more space needs more fuel. Unless you cook for 25-30 people monthly ...you don't need 22. I have cooked 18 lb brisket in 18 wsm
Have had incredible success in the last few months since purchasing my 18 in Weber Smokey Mountain. Have toyed with the idea of getting the bigger one, but I think should the need arise getting another 18 inch would be the ticket. The recently did two big pieces of corned beef that became Pastrami and used the bottom rack which worked out beautifully. Great video thank you and keep up the great work!
If you like ribs I recommend the 22. Problem with the 18” is its diameter isn’t large enough to accommodate a rack of ribs. This mean you have to get a little creative in getting them to fit properly.
I’ve had an 18 for over two years now and I cook ribs on the regular. It fits two racks of pork spare ribs just fine and if I want to cook more racks I have a rib rack I can use for it. The key for me is cutting off parts that I know are not going to be eaten like the flappy ends. Once that’s done the ribs are shorter and easily fit on the 18.
I run both the 18 and the 22. My 18 is easier to run and is a pork butt machine. Hard to cook more than 2 ribs without rolling them up or stacking them right next to each other on the 18 but the 22 gives me more room for laying ribs flat out and larger 14-15lbs briskets. I also use the 18 with out the water bowl and cook Tri-tip and chicken wings directly over the coals and find the top rack at the perfect height for a "Santa Maria" style bbq. The 18 will be more than enough for the backyard cooker but I wanted to be able to cook food for over 100 people and the 22 helps tremendously for that with the 18 supplementing me with additional "grill space". Seriously do not underestimate the size difference between the 18 and the 22. It feels like I can cook more food on a single 22 than on two 18s IMHO simply because of the surface area deltas between the grates of the 22 vs the 18. Bigger cuts can fit in the 22 which will give you a greater yield which allows you to serve more. This of course is just all anecdotal. All I can do is share what I've experienced cooking with both of these smokers. I do want the 14 just to take with me on camping trips
Great video, I have the 14 and 18 and have waffled back and forth on the 22, I put the 22 on my Xmas list due to Arbor Fabricators charcoal basket, that is my must have accessory, it’s amazing the size difference, I love brisket and want to compare the 22 and Gateway Drum 55 gl in a cook off, once again great job.
Have you cooked a full brisket on the 18"? Really trying to determine if it's worth the extra $150 vs 18" if I may only cook a brisket once a year. Most likely will use it to smoke pork butt, flat ends, ribs.
Thanks for putting out this video, because I’m I’m interested in buying a Weber smoker . I’m looking at the kettle and Smokey mountain. Mainly to smoke briskets. I like the Smokey mountain because the fire doesn’t need much attention. But I feel the 18 inch SM is too small for 10 lbs and up briskets. I’m just guessing here.
I love my 18 WSM, kinda want a 22 for more Volume when the family comes over for a birthday party. Have you tried cooking with hardwood splits with the door open for more oxygen, it is a game changer for chicken wings and legs.
Really nice comparison Brian! I have a cooker like the WSM. I’m not sure since I haven’t used it in about 25+ years. It might be the 18 in. I used it way back in the day and always made great ribs and thick cut chops. Now I’m curious and have to check it out. Thanks for sharing brother!
Thanks for the informative video. I just assembled my new 18" WSM today. Haven't used it yet but I have 8 years of experience with a Brinkmann vertical charcoal smoker that I modded to be like a WSM. I also have a PB Vertical pellet smoker for when I want to cheat! I have already ordered a gasket for the door and you have convinced me to get a lid hinge next. The only bad advice you gave is related to the Skoal thing. I'm a cheesehead but I subscribed to your channel anyway! 😂
Are those your turbine climbing crocs? I agree that the 18 is awesome and rock solid, I’ve had this one for 16 years or so, the 22 is nice for space occasionally. If you put water or playground sand in your water pan covered with tin foil for the sand, it will act as a heat sink for when you open the lid. Might help. Also you can take the middle out and use them as a kettle. Awesome job Seth!

I've had the 18" for almost 20 years. Only issue is that I am starting to see some corrosion - the water pan has some 1 to 2 mm holes that probably developed those in the last two years and there is some rust around the handle where it got dented in when dropped. Was considering the 22" but, based on the comments, I think I'll stick with the 18 and just find a replacement water pan. It will fit a 15 l. brisket no problem. Ribs can be trickier but I can get up to 6 racks on there if I coil them up into a "crown" shape with twine and smoke them vertically. After watching your video I feel like I am missing out on some mods that might make using the WSM more enjoyable. Will be checking those out - thanks for the video.
Have the older WSM (no gage in dome) got it in 2004, befor that I started with the Brinkman water smoker now that thing was work! The 18" is just right for my needs but then I got the bug for UDS, built the UDS for less than $125.00. Use the WSM for just small cooks but use the UDS for larger cooks. Did find a WSM on craiglist for $100.00 (newer model) guy I get it from wanted a pellet smoker (?) Anyway used it twice and gave to my brother. I been thinking about building another UDS but in the 30 gallon size since it will take the same grate size as the WSM 14", then I asked myself why I need another smoker? Answer, I just do.
Hahaha there ya go! But I’m pretty sure the 30g will be the same grate size as the 18” WSM. Could be wrong but I have the PBC and that’s the same size at the 18” WSM.
Looking at either an 18inch WSM or a Bronco Pro. There seems to be a huge price difference between these two. It feels like the bronco pro is very solid but there is a big price difference between the two and I am a first time smoker so I’m not sure I want to spend that much in case I don’t sue it often or enjoy it. Thoughts?
Well first off the Bronco Pro is a 22” drum smoker so that’s why there’s a big price difference. The Oklahoma Joe’s Bronco is an 18” drum smoker and about half the cost and sometimes you can get them on sale for super cheap. Also when you purchase the Bronco or Bronco pro you get everything with it.(meat hangers, hooks, baffle plate)
Do you recommend one over the other for someone new? I’ve seen avid fans for both units. You seem to have some good experience with both. Edit: I have several lowes gift cards, if that makes a difference in your recommendation.

What do you mean the 22 is hard to manage? They’re basically set it and forget it no? Does it require frequent vent adjustment or just takes a while to warm up?
I read many comments about the 22" using a lot of fuel...is there another charcoal basket that might reduce the fuel consumption but get the same cooking results?...or perhaps get a charcoal basket from an 18" WSM and put it in the 22"?
It's bigger so there's more heat loss. That means you need more heat generation. Unless you find an accessory that's basically a smaller bullet smoker that goes inside the 22", it's inevitable that you'll need to use more combustible to get the same cook as an 18".
I have the 22. Can you get 2-3 slabs laid flat on the 18? That is primary reason i bought the 22. I do nit like hanging my ribs. I have on occasion used the bottom rack. Smoked 6 slabs for july 4th one yr. It was a pain in the ass tho working with the ribs on bottom rack. Great vid sir
You can get 2 down without and issue and depending on how small you trim them you might be able to squeeze 3 in. I think the only way to get that many racks would be using a rib rack but I haven’t used one of those in years.
I just bought an 18. Pretty new to this and am thinking I should have gone with the 22 because I'm hearing the 18 is too small for brisket, which is what I want to cook primarily... Thoughts?
You can still do briskets medium to large on the 18” pretty easily. If it’s too big just use something to prop the center of the brisket up if that makes sense.
Ended up getting a WSM 22 yesterday. I want to try lump and briquette. I was looking at getting a small 10lb bag of jealous devil lump just because I hear people talk about it a bunch. Would a 10lb bag be enough to fill the ring on the WSM 22?
Ya that should work but depending on what you’re cooking I’d buy more just to be safe. The 22” is kind of a fuel hog especially when it comes to lump IMO.

I do turkeys every year on mine. I’ve done one as large as 16 lbs and it fits just fine. I try to keep them between 12 and 14 lbs because it’s only 3 of us.
Very true, it’s bigger than you think. But in my experience the 18 won’t fit a full brisket, and even two racks of pork ribs can get tight on a single grate. Otherwise it’s been great!
I'm trying to find a real deal on a 22" WSM. I have a 14" as well. That way I'd have Papa, Mama and baby WSM. That way I'd have the whole whole family.
The WSM has been on the market since the early 80’s . Do we really need another opinion on which is best ? There are already 100 videos doing this same thing.

@@bassman7496 I use maybe half of a 15 plus pound bag of Royal Oak lump and it can last for 12 hours or more without having to add any more fuel.

I have a a 18 we are a family of 6. It is ideal for a family size like mines. It is not a fuel hog like the 22. I recommend the 18 over the 22.

I admit the 22 is awesome in it's own right because it's a lot bigger when you see it in person vs. seeing photos of it. All WSMs are very user friendly, the food cooked on them taste so darn good, and very affordable if you can't afford the 1/4 in thick offsets. Highly, HIGHLY recommended. Cheers!

I have the 18 inch and it works great. But I find when I do ribs or brisket it’s really tight to fit the meat on the rack. I will be buying the 22 inch for that reason
I have the 22 inch, but my decision was made because I have a 22 inch kettle, and all my weber kettle grates will fit, my accessories work with it, made sense for me. I also recommend the ArborFab charcoal basket. USA made in Michigan.

New to smoking so I made a mini WSM, now I'm hooked! Was about to purchase a 22 but was up against the fence when in came to the 18. I mainly just cook for myself and sometimes for a hand full of other people. The 18 will most likely be my next purchase. Thanks for honest review and posting!

I started with 18wsm. Sold it and bought the 22. Really wish I would have stuck with the 18. Like you said the 18 runs all day without much effort. My 22 takes a good while to settle in.

Great vid, thanks. Good tip re: the charcoal grate. I've had an 18" WSM for almost 15 years and it...just...keeps...running! Capacity is a bit of an issue, but man is it fuel efficient and holds temps like a champ. I've had to replace the grates but otherwise it's held up, even here in south Louisiana where the heat/humidity is HARD on equipment. Agree that the lid hinge is a worthwhile accessory. Stainless grates would be another I'd recommend.

My first WSM was 18. It was great. I have a 22 now and also like it. The lighter weight of the 18” parts makes it easier to manage. The food capacity can be a bit of a drawback. I like that
the 22” I can fit a lot of food onto a the single top grate. It definitely burns more fuel, but it also cooks more food using that fuel so it’s not an apples to apples comparison with the same amount of food in each. If the 18” is enough cooking space for you, it’s the better choice… but if you want the occasional big cook, the 22” is the way to go.
I bought the 18 a year ago, I didn't really need it - I literally have every size Weber kettle. But I took a flier and bought the 18 and love it. It is fun to cook on.

My 18 inch needs 2 bottom vents 95% closed to hold 250 F, so before i open the lid to check on the food, I close the 3rd vent and I find that it keeps the temps from spiking (the downside is you can forget to open the vent back up once you put the lid back on) Otherwise, the temps will spike, but even then, it's easy to bring them back down. Avoiding spikes is important, because if I have to choke the fire to bring the temps back down, the smoke gets dirty and the food can turn out bitter. If i ever have spikes, i prefer to add room temp water to the water pan over closing the vents too much.

Great comparison. I bought my 22 WSM used for $50 and put about $350 in mods into it. I've never wanted for a smaller one, use Weber kettles for smaller cooks. These are rib, brisket and pork butt machines! Nice job....

Great video! I have both the WSM 22 and WSM 18 and think they're great smokers! I agree with most of the comments here, but my experience has been that it's easier to manage heat on the 22 WSM. I live in So Cal with moderate temps so I'm guessing this is a factor, but when I fill the water bowl, use the minion method, and keep all vents completely open, the 22 settles into 275 degrees and stays that way throughout the cook. I've used it primarily for smoking turkey or ribs with great results (still haven't tried pork butt or brisket, but they're definitely on my list!). While I've had to work with the 18 WSM to manage heat, I still use it more often due to its size and fuel consumption. But both smokers have a place on my back patio.

I started with an 18", bought a 22", and found a brand new 14" at a sale for a nice discount recently but haven't used it yet. The 18" is a really nice size for pork butt and ribs. I generally use a rib rack and can easily fit 3 racks on the top grill with the Weber rib rack. It's a little crowded for a full packer brisket but you can make one fit. The 22" is huge and definitely uses more fuel but it'll fit even large briskets no problem. I'm planning to use the 14" to cook a pork butt here soon.
I do recommend buying a 2nd charcoal grate for any WSM and turning it 90 degrees to the base charcoal grate. You end up with longer burn time. I ran my 22" (completely stock other than the 2nd grate) using a Thermoworks Signals and Billows fan set to 250 F and it was still ~220 F according to my Thermoworks Signals after 11 hours. I used about 15-16 lbs of Kingsford competition briquets on that cook.
WSMs are awesome and you can turn out fantastic BBQ with honestly not a ton of effort. Once they're set up, they basically just sit there holding their temp.

The GF has the 18". What I learned is how much water in the pan changes (lowers) the temperature. It is not about moisture, it changes the heat. And it isn't constant as the water evaporates. But I like it. It just takes a moment to get used to it.

Heat is more stable and easier to manage on the 22', yet it consumes more fuel. For big pieces of pork, suck as brisket or pork butt, it's the way to go when you go smoking for more than 7 hours
I also have both smokers. I use the 22 primarily for hanging ribs. I can get 12 racks on it. This is my go to method for ribs. The 18 I find is not deep enough for this. Each smoker has its own purpose.

I didn't realize the 22" was so much bigger. I have the 22", went with the 22 because of the amount of food I'd be cooking. I use both racks when I'm making ribs. I normally do four to five racks of ribs and is one of my favorite things to make.

Everybody on the /r/smoking Reddit says to just go for the 22" because "you'll never regret having too much space". That's probably true, but it seems overkill given that I'll be smoking for 2 people 90% of the time, especially given that the fuel requirements are higher on the 22".
I'm coming from electric as my first smoker, so I'm glad to hear that the 18" (that I just ordered!) is easy to keep the temperature steady since that was one of my big concerns. Thanks for the video and showing off your mods, really huge help!

@@lorinchak7436 I'm pretty happy with the 18" still. I do have to slightly bow a full rack of ribs if it's big enough, but it's always shrunk enough after an hour or so that it lays flat. I still haven't tried a full brisket yet, which I think is the only thing I still have potential concerns with at this point. I think at worst I can get a hanging hook for a brisket or something to lay under the brisket to "arch" it to make it fit. Very happy with the 18" overall though!
Super happy with the 22. Yes, temps spike when you open it, but it's easy to fix. Just don't leave it open for too long.
On the upside, huge space. Very comfortable to work with.
I've had (2) 18 WSM's for over a decade and find them to be quite perfect, I usually do two pork butts or ribs and occasionally a brisket. However, I just received a 14 WSM as a gift and it's absolutely PERFECT for doing two pork butts. I did my first cook last night and followed my usual method as with the 18 and it held through the night no problem. It's on hour 11 right now and it's chugging along just fine. I'll probably be using the 14 much more frequently than the 18 now as it uses far less fuel with the same results.

@@MadHorseBBQ I think you'll like it! I didn't have any issues with it putting out more smoke or running any hotter than the 18 WSM as someone commented. Smoke and heat are all about fuel and air - control those and it doesn't matter. I just looked up the price of the 14 and it's $279! Back in 2009 I paid $239 for the 18 WSM. Honestly, there's no way I would pay $279 for the 14 if I already had the 18. You can buy a LOT of charcoal for $279!

I have had the 18in for 25 years and it is more than enough for cooking for a family..
It's nice having the extra space of the 22in but it is more expensive and uses more charcoal and how often are you going to cook for 10 or 20 people?

Ya TBH the 18” is my easiest and best running charcoal grill I have. To me the 22” is more difficult to control as well. But you nailed it on every other point. I’m happy I have both and kinda want the 14” to complete the collection.
You don't need the 22 unless you cook for 30 or more people on a monthly or more frequent basis. 18 is fine for most people. The 22 uses way more fuel

The 18 can fit a average size brisket? That’s my big issue with deciding right now, and store around me don’t carry the 22 so I don’t have a good side by side comparison
@@kbrien23 yes IMO the 18” can handle a brisket up to about 12 pounds regularly. It can fit bigger if you prop up the middle when you cook it.

Have had incredible success in the last few months since purchasing my 18 in Weber Smokey Mountain. Have toyed with the idea of getting the bigger one, but I think should the need arise getting another 18 inch would be the ticket. The recently did two big pieces of corned beef that became Pastrami and used the bottom rack which worked out beautifully. Great video thank you and keep up the great work!

If you like ribs I recommend the 22. Problem with the 18” is its diameter isn’t large enough to accommodate a rack of ribs. This mean you have to get a little creative in getting them to fit properly.

I’ve had an 18 for over two years now and I cook ribs on the regular. It fits two racks of pork spare ribs just fine and if I want to cook more racks I have a rib rack I can use for it. The key for me is cutting off parts that I know are not going to be eaten like the flappy ends. Once that’s done the ribs are shorter and easily fit on the 18.
I use a hunsaker rib hanger
I run both the 18 and the 22. My 18 is easier to run and is a pork butt machine. Hard to cook more than 2 ribs without rolling them up or stacking them right next to each other on the 18 but the 22 gives me more room for laying ribs flat out and larger 14-15lbs briskets. I also use the 18 with out the water bowl and cook Tri-tip and chicken wings directly over the coals and find the top rack at the perfect height for a "Santa Maria" style bbq.
The 18 will be more than enough for the backyard cooker but I wanted to be able to cook food for over 100 people and the 22 helps tremendously for that with the 18 supplementing me with additional "grill space". Seriously do not underestimate the size difference between the 18 and the 22. It feels like I can cook more food on a single 22 than on two 18s IMHO simply because of the surface area deltas between the grates of the 22 vs the 18. Bigger cuts can fit in the 22 which will give you a greater yield which allows you to serve more.
This of course is just all anecdotal. All I can do is share what I've experienced cooking with both of these smokers.
I do want the 14 just to take with me on camping trips

Have you cooked a full brisket on the 18"? Really trying to determine if it's worth the extra $150 vs 18" if I may only cook a brisket once a year. Most likely will use it to smoke pork butt, flat ends, ribs.

Thanks for putting out this video, because I’m I’m interested in buying a Weber smoker . I’m looking at the kettle and Smokey mountain. Mainly to smoke briskets. I like the Smokey mountain because the fire doesn’t need much attention. But I feel the 18 inch SM is too small for 10 lbs and up briskets. I’m just guessing here.

I love my 18 WSM, kinda want a 22 for more Volume when the family comes over for a birthday party. Have you tried cooking with hardwood splits with the door open for more oxygen, it is a game changer for chicken wings and legs.

Thanks for the informative video. I just assembled my new 18" WSM today. Haven't used it yet but I have 8 years of experience with a Brinkmann vertical charcoal smoker that I modded to be like a WSM. I also have a PB Vertical pellet smoker for when I want to cheat! I have already ordered a gasket for the door and you have convinced me to get a lid hinge next. The only bad advice you gave is related to the Skoal thing. I'm a cheesehead but I subscribed to your channel anyway! 😂

There is a lot of talk about use of the water bowl. Do you use the water bowl when smoking in the WSM?
Are those your turbine climbing crocs? I agree that the 18 is awesome and rock solid, I’ve had this one for 16 years or so, the 22 is nice for space occasionally. If you put water or playground sand in your water pan covered with tin foil for the sand, it will act as a heat sink for when you open the lid. Might help. Also you can take the middle out and use them as a kettle. Awesome job Seth!

I've had the 18" for almost 20 years. Only issue is that I am starting to see some corrosion - the water pan has some 1 to 2 mm holes that probably developed those in the last two years and there is some rust around the handle where it got dented in when dropped. Was considering the 22" but, based on the comments, I think I'll stick with the 18 and just find a replacement water pan. It will fit a 15 l. brisket no problem. Ribs can be trickier but I can get up to 6 racks on there if I coil them up into a "crown" shape with twine and smoke them vertically. After watching your video I feel like I am missing out on some mods that might make using the WSM more enjoyable. Will be checking those out - thanks for the video.

Have the older WSM (no gage in dome) got it in 2004, befor that I started with the Brinkman water smoker now that thing was work! The 18" is just right for my needs but then I got the bug for UDS, built the UDS for less than $125.00. Use the WSM for just small cooks but use the UDS for larger cooks. Did find a WSM on craiglist for $100.00 (newer model) guy I get it from wanted a pellet smoker (?) Anyway used it twice and gave to my brother. I been thinking about building another UDS but in the 30 gallon size since it will take the same grate size as the WSM 14", then I asked myself why I need another smoker? Answer, I just do.
Hahaha there ya go! But I’m pretty sure the 30g will be the same grate size as the 18” WSM. Could be wrong but I have the PBC and that’s the same size at the 18” WSM.

Looking at either an 18inch WSM or a Bronco Pro. There seems to be a huge price difference between these two. It feels like the bronco pro is very solid but there is a big price difference between the two and I am a first time smoker so I’m not sure I want to spend that much in case I don’t sue it often or enjoy it. Thoughts?
Well first off the Bronco Pro is a 22” drum smoker so that’s why there’s a big price difference. The Oklahoma Joe’s Bronco is an 18” drum smoker and about half the cost and sometimes you can get them on sale for super cheap. Also when you purchase the Bronco or Bronco pro you get everything with it.(meat hangers, hooks, baffle plate)
Do you recommend one over the other for someone new? I’ve seen avid fans for both units. You seem to have some good experience with both.
Edit: I have several lowes gift cards, if that makes a difference in your recommendation.

What do you mean the 22 is hard to manage? They’re basically set it and forget it no? Does it require frequent vent adjustment or just takes a while to warm up?
In my experience the 22” requires more adjusting on the vents.

I read many comments about the 22" using a lot of fuel...is there another charcoal basket that might reduce the fuel consumption but get the same cooking results?...or perhaps get a charcoal basket from an 18" WSM and put it in the 22"?
I don’t think a different basket would change the fuel consumption on the 22”. The cooker is a hoss and needs to eat lol. If that makes any sense.
It's bigger so there's more heat loss. That means you need more heat generation.
Unless you find an accessory that's basically a smaller bullet smoker that goes inside the 22", it's inevitable that you'll need to use more combustible to get the same cook as an 18".

I have the 22. Can you get 2-3 slabs laid flat on the 18? That is primary reason i bought the 22. I do nit like hanging my ribs. I have on occasion used the bottom rack. Smoked 6 slabs for july 4th one yr. It was a pain in the ass tho working with the ribs on bottom rack. Great vid sir
You can get 2 down without and issue and depending on how small you trim them you might be able to squeeze 3 in. I think the only way to get that many racks would be using a rib rack but I haven’t used one of those in years.

I just bought an 18. Pretty new to this and am thinking I should have gone with the 22 because I'm hearing the 18 is too small for brisket, which is what I want to cook primarily... Thoughts?
You can still do briskets medium to large on the 18” pretty easily. If it’s too big just use something to prop the center of the brisket up if that makes sense.

The water has nothing to do with keeping meat moist and everything to do with the science of a humid area evenly dispersing heat.

Ended up getting a WSM 22 yesterday. I want to try lump and briquette. I was looking at getting a small 10lb bag of jealous devil lump just because I hear people talk about it a bunch. Would a 10lb bag be enough to fill the ring on the WSM 22?
Ya that should work but depending on what you’re cooking I’d buy more just to be safe. The 22” is kind of a fuel hog especially when it comes to lump IMO.

I do turkeys every year on mine. I’ve done one as large as 16 lbs and it fits just fine. I try to keep them between 12 and 14 lbs because it’s only 3 of us.
