10 minute recipe for cold Tofu bean noodles 🍜🍜🍜

Today I’ll share how to make "cold tofu bean noodles" in 10 minutes. This is called Kongguksu in Korean and the original recipe is to make it with soybean by boiling it and grinding it.
But this recipe is to use the tofu instead of boiled soybeans and when you grind tofu and every ingredients, you will get thick and nice Kongguksu base which is almost same quality as soybean Noodle soup, but by much easier way. Tofu is full of protein, so it’s highly nutritious and good for diet as well.
It’s boiling hot in Korea now, so this cold noodle will cool us down little bit. Hope you enjoy it!

Ingredients: 2 servings
320g Tofu
400ml soybean milk
120ml water
2T peanutbutter
1T sugar
2T sesame
1T salt
200g Noodle
Topping:
1/4 cucumber
1/2 small tomato (or cherry tomatoes)
*How to make:
Grind tofu and all the ingredients (add/reduce sugar and salt as wanted)
Boil noodles in about 2L of water
Add 1 cup of cold water into boiling noodles and do this 3 times
Drain water and wash the noodles in cold water
Put the noodles in a bowl and pour the tofu+soybean milk base and decorate with cucumber and tomatoes
