  • 1st Place 2024 World AeroPress Championship Recipe by George Stanica from Romania
    Steps:
    1. Start by measuring 18g of coffee.
    2. Grind the coffee to a medium-coarse consistency. (Comandante C40 Mk4 with Red Clix, 58 clicks or ~870 µm)
    3. Rinse 1 Aesir paper filter with hot water.
    4. Prepare the AeroPress in the inverted position, aligning it around the 4th mark.
    5. Add the ground coffee to the AeroPress and give it a gentle shake to level the grounds.
    6. Pour 50g of water heated to 96°C using a Melodrip, taking 5-6 seconds.
    7. Let the coffee bloom for 30 seconds.
    8. Pour another 50g of water over 5-6 seconds.
    9. Stir the mixture gently in a North-South-East-West (NSEW) pattern for 10 seconds.
    10. Turn off the kettle and remove the kettle lid.
    11. At 1:20, place the cap on the AeroPress and gently press to remove excess air for about 10 seconds.
    12. Swirl the AeroPress gently and place it on your server.
    13. At 1:35, start pressing gently, aiming to complete the press within 30-40 seconds until you have 76-79g of coffee.
    14. Add warm water to the brew until the total weight reaches 130-135g.
    15. Add 20-30g of room-temperature 0 ppm water for balance.
    16. Serve and enjoy your championship-winning coffee!
    Water: Mix of Aquacode diluted to ~85-90ppm with 0ppm water, 96°C for extraction, Room temperature for 0ppm

    Interesting method. So it’s a quick brew with higher starting coffee dose that avoids extracting bitter compounds. For aeropress, my typical coffee ratio is 1:16 (230g/14g) and I based on my grind setting I dial in my brew time between 3:30-4:30 for light to medium roasts. This new method you’re sharing speeds up brew time but uses up more beans. Even though I’m happy with my method but I’ll try anything once if only for scientific curiosity.

    Excellent video. It is indeed weak at 13% extraction with 870 microns. Will try again grinding finer. Thanks.

    Isn’t the whole point of Aeropress is for convenience? It starts getting more complicated. I just want a damn coffee without driving in a 15 degrees temp

      I agree that it should be convenient for a daily routine. My personal favourite is the 2021 world aeropress recipe. 81 degrees, no dilution and overall easy to make in the morning

    Do a blind taste test and see if you can tell the difference when pouring the water in without Melodrip and just stirring however you want instead of NSEW

    • @PierreHomeBarista
      @PierreHomeBarista  20 днів тому

      The goal of the video is to demonstrate the recipe. The Melodrip allows you to get all the coffee grounds evenly wet. You can do this recipe without the Melodrip if you pour correctly. The NSEW stirring method is used to guide people on how to stir effectively and to avoid overextraction by minimizing excessive agitation.

      Hi! I’m not the creator of this recipe. That credit goes to George Stanica. My goal with this video was to provide a visual version of his recipe, which is currently only available in written form online. In the future, I plan to post a video diving into the different variables that affect brewing with an Aeropress, so stay tuned!

      You stir in your AeroPress for one or more of the following reasons:
      1. You maken sure all coffee grounds are equally wet. This usually happens in the beginning of the recipe.
      2. You try to break the crust on top before plunging.
      3. Stirring allows you to extract more (long story short), but you have to watch out for not overextracting your coffee.
      I hope this explains to you why George has the specific instructions on how to stir your coffee. It might seem redundant at first but there is a logic behind stirring.

    • @phloxevl0
      @phloxevl0 14 днів тому

      @PierreHomeBarista I stir in my AeroPress as well. I just found it a bit funny/ridiculous that there needs to be a pattern to stirring so I was taking a jab at that part. I don't think it's any different than stirring in a clockwise/counterclockwise pattern

    • @PierreHomeBarista
      @PierreHomeBarista  14 днів тому

      Diluting with +-75g of water is not uncommon. The 1st place 2023 World Aeropress Championships recipe diluted with +-80g of water. Of course you have to adjust the recipe to what you like the most

    • @adamh603

      it sure ain't espresso :)

    • @loganmontgomery1955
      @loganmontgomery1955 2 місяці тому +14

      it depends on what aspect they're trying to emphasize, I find that many of the championship brews go for the sweetest brew they can get, by making a concentrate and diluting it to a temperature where the sweetness is even more prominent, they can really pull out something unique enough to stand out from the other competitors.

    • @edoalva48
      @edoalva48 2 місяці тому +1

      Well these types of brewing are often being compared to tea in general. Especially when we have to explain it to laypeople. So while it isn't actually weak, it is indeed "weak" if you're comparing it to other extraction methods (i.e.: espresso).

      I was thinking the same thing when I first read the recipe. You end up with 150g-165g which is not too watery in my opinion, but it is not a very strong cup. You should give it a try

    • @PierreHomeBarista
      @PierreHomeBarista  2 місяці тому

      It is coarser. Around 870 µm. Iwould advice you to use this website to find how much that is approximately for your grinder: honestcoffeeguide.com/coffee-grind-size-chart/?
