I enjoyed this series and am delighted to see it finish on a strong note. I lived in Sweden for a time as a kid, and years later, as a young Chef, I listed to family friends complaining about the restaurant scene in Stockholm, during the time California came into its own. I now look forward to returning to Sweden, for the culinary as well as the familiar. Please, keep sharing these videos. Blessings ChefMike

I just love Skadenavian or Nordic Ppl (yes, there is a diverance!) I´m from Central Europe (Austria) myself, but the further north u go the more handsome ppl get. Like Schleswig-Holstein to Denmark, or like here sweden, norway, island, may finland if u understand them ;) Only diverance is GB, they are nice in there own way. But not handsome or such thing xD
This will be one of my favorite restaurant . Absolutely traditional yet modern. I guarantee the food hanging above the stove is absolutely scrumptious. After all it's cooked on wood fire.

I have to agree with Dahlberg, ordinary/traditional Swedish food and spices aren't that exciting. But just as it's stated in the video and by him, Swedish chefs have gathered a lot of techniques, spices and ideas from cuisines around the world and instead of just importing them right off the bat, Swedish cuisine is now fusing it with ingredients that exist locally. And there are some AMAZING ingredients in Sweden, so I do believe that this will up the Swedish cuisine to a whole new level. Tourists can say that Swedish food is boring all they want, it's just a matter of a couple of years before Swedish food will get to its A-game.

You know whats funny? I work in bussines of chanterelles and we export them to Sweden from Latvia. Chanterelles are also mine favorite mushrooms. my mother and basicly everybody in Latvia cook them in pan with butter, sweet cream,little pieces of bacon,black pepper,and fresh greens (dill,parsley,spring onions n stuff) and serve it all with new potatoes. It`s latvian classic

This is the reason why the majority of Europeans are not fat. They eat healthy food and in tiny portions. While here in America we eat enough food to feed a small family.

Compare the big sizes at fast food restaurants in America to Sweden. And the traditional dishes that we more commonly eat are not as bad for you as American ones. When you think of Sweden and what we normally eat, it's a lot more basic and '' normal '', while in America it's a lot more superficial and greasy. Same thing goes for candy and cakes in Sweden too, it's a lot less of unnecessary crap. Americans seem to love to deep fry everything too. And pour A LOOOOOOT of cheese over everything. America and the America culture most definetly is very different and causes Americans to be a lot fatter on average.
It's my dream to visit Sweden ]: i have an aunt that lives there, and a good friend as well. I'm a vegetarian but man i wouldn't mind putting that aside to try all their great food. Wish i had a show so i could go out and have all kinds of fun adventures like on this video series :D
Yes, the chease is called "västerbottenost" it is a hard chease with a strong flavour. The bread is not something i can exatcly pin point of the exact bread. But in Sweden we call dem "tunnbröd" = English "flat bread". It very commen to eat it like at lunch or dinner like a tortilla but also as a normal breakfust bread.
Never want this swedish segment to end, this guy is THE best!
