I think it has a lot to do with figuring out the perfect technique to cooking something For example: chicken thighs can be absolutely amazing if you cook them right. Crunchy skin and tender insides Use the bones from the thighs to make broth Fry potato rounds in the leftover fat from the chicken thighs, add margarine and garlic then add your broth. Bake in the oven Cook crushed garlic in margarine, then add equal parts jam and miso, with a bit of lemon juice then cook down Dump some of the potato broth on a plate, place some potato rounds, then put the chicken thighs on a bed of lettuce with the miso sauce underneath Boom now you have fondant potatoes with miso glazed chicken thighs. I wouldn't call it gourmet but they serve this kind of thing at fine dining restaurants, but you can make it all for like 5$
