4 grains of allspice, 3 bay leaf leaves 3 glasses of water 1 glass of vinegar. Sugar to taste 3 small teaspoons or more to break the vinegar. You must boil this and put hot then the jar will seal. you can add raw onion sliced into the jar. Try it, maybe you will like it. Regards Łukasz.

I've pickled just about everything I can get here in AZ (pickled lizard is horrible), so I was excited to see you doing cockles. To be honest, I was bit put off you only used vinegar. Why not use some garlic cloves, toasted pepper corns, onions, all spice and even a few cloves(go easy on the cloves) even mustard seed is great in a pickle. I know how you like a little heat, so any spicy peppers or chili. Paste works great.
Currently in my fridge, pickled eggs(sweet and spicy batches) and shrimp and smoked sausage. If I pulled a straight vinegar pickle, my family would probably throw me to the curb.
If you would like me to share any my recipes, just ask. I will gladly share.
Anywho,, another great and informative video and glad Sam got his pay for being cameraman.

I also don't purge - get em cooked, then wash them. but that's only because I can't wait and end up covering them in flour and having fried cockles :)

I'll give you a little tip when pickling, you should heat up the vinegar, before pouring it over. In this way it will create a vacuum in the jar when it cools, and the product will last for a lot longer.
