Thank you for your mooncake recipes! Did you strain the lotus seeds after the boiling/simmering step before blending? Or did you blend the seeds with the boiling water in it too?
Hi, I didn't strain the water. I added a little bit of water to it while blending it to make it easier. Just add enough water for it to blend. If you add too much it'll take a long time afterwards to cook it into a paste.
Mine didn't go crumbly last year when I used peanut oil, this year I used almond oil... And I feel like my texture is more crumbly too. But I also think last year I blended the lotus seeds more. I noticed from another comment that she adds water to help blend it better but too much water can make it more difficult to turn to a paste. I did end up using more oil than suggested this time to try add more moisture and make it less crumbly 🤔

@@keiiii07 maybe, I used a half sugar/half sweetener but it's still a white like hers, unless hers is actually a golden caster and the lighting is off. Either way I've managed to shape my mooncake and just waiting to bake! I find when you have the lotus paste in the air, that can also make it start to crumble but when you have the paste in your hands and are working it, the oil will heat and the paste will become more moist so you can mould it into a ball or around an egg if you're doing egg filling 😊 I started this at 10am today and it's coming up for 5pm hahaha, 7 hours work and I've only made 6!
@@joansu Depending on the size of mooncake mold you're using and if you're using salted egg yolk with it. If only using lotus seed paste as filling for a 50 Grams mold, you can make around 25 mooncakes.
