I’ve never heard of it. Growing up in West Texas I thought I knew just about all of the secret dishes. This looks like another great one! Hope we get a Caldo de Pescado y Camaron recipe. That is my favorite winter time dish.
My grandma used to roll the ground beef into little meatballs so it was like Tejano spaghetti. I do the same for my kids today and the love it! Keep the videos coming, primo!
Interesting that you add meat. I didn’t grow up eating this way, but then again, I don’t make it quite how I grew up eating it. That’s the amazing thing about fideo…it takes in the personality of the kitchen. Many people like to blend the tomatoes and onion, but I prefer to sauté them to bring out the flavor. If I’m in the mood, I’ll get out the osterizer to blend up any last chunks. I also add roasted chile.

Made this a few weeks ago with conchas and added potatoes and zucchini to the mix. Served with some little quesadillas. I was craving it and needed some comfort food. My mom and grandma always made fideo, conchas or estrellas for us kids with a cup of beans and fresh tortillas. It was the Mexican American equivalent of grilled cheese with tomato soup.

That looks so good!! But, I'm type 2 diabetic since May... I've changed my diet to low carb, so I cut out noodles, rice, potatoes, white flour, sugar... It's a huge change for me, but I feel better and I've lost almost 50 lbs! I may make this for family, but I won't eat much of the fideo myself... But dang it looks good!!!
I used your recipe, but instead of ground brisket, I used some brisket from a point that I did in my smoker. I had to use a little beef broth when I added my onions and peppers to my meat. I just diced it up into small cubes and it turned out really well.
